This one tastes amazing and is super super simple. I used the Mussaman paste with some tofu and vegetables to make a quick easy dinner. Its something I always have in the cupboard for after long days at work when you need something fast.

I've has a few requests for the vegan choc Mousse so here it is;

Aquafaba from 1 tin Chickpeas (drained)
1/4 teaspoon cream of tartar
1/4 cup Icing sugar
Pinch of salt
1 teaspoon vanilla essence
140g cooking chocolate or bits

Whip the aquafaba, vanilla, salt and cream of tartar for 10-15 mins until super stiff peaks. Then add in icing sugar and mix until combined.

Melt chocolate over double boiler.

GENTLY fold in the melted chocolate keeping as much air in the nix as you can.

Spoon into cups and refrigerate overnight.

I decorated with grated choc and whipped Vegan cream amd strawberries but anything goes. Would be nice on a choc biscuit base as well.

Individual cob loaves and a super rich chocolate Mousse for hubby's birthday dinner tonight.

I was very happy with how the Mousse turned out (very light and fluffy). Let me know if you want the recipe for either. I was on shift so they were very quick and easy.

Our Christmas spread this year - 3 mushroom galette, potato bakes, mac n cheese, dinner rolls, Caesar salad, wombok salad, spinach and leek pull a part, potato salad, and Moroccan lamb filo with garlic minted yoghurt sauce.

We went in to visit a different place that unfortunately wasn't open and happened upon this place. It was a pleasant surprise with a tofu burger and nice breaky bowl.
The standout was the cashew milk iced latte and fresh juice πŸ˜‹

OMG our best food experience yet in Phnom Pen. This gorgeous restaurant has top level service and an extensive menu. We chose the discovery platter to share to start with, an elemental burger and the mushroom dumplings in white wine sauce. We were sooo full but couldn't go without sampling their creme brulee which did not let us down. An absolute delight - put it on your list.

If you've ever been travelling to remote areas you'll understand our joy at finding oat milk! This great little shop supports locals and trains them in hospitality to find employment. We had a lovely iced matcha latte and iced chocolate (beautiful in this humidity ). Please call in if you ever happen to be in this unique part of the world.
