What exactly is ceviche? Ceviche is a seafood dish typically made from fresh raw fish cured in citrus juices, such as lemon or lime. Ingredients
¼ teaspoon white sugar
2 ½ tablespoons sea salt
½ teaspoon chili paste or sauce
¼ cup fresh lime juice
¼ teaspoon fresh ground pepper
¼ cup extra virgin olive oil
1 garlic, minced
¼ cup chopped red onion
1 ripe tomato, finely diced
2 tablespoons minced fresh cilantro ( coriander )
600g of very fresh salmon fillets (sushi-grade preferred), dice
1 avocado, sliced if you prefer

step :
In a large glass or plastic bowl, dissolve the sugar, salt, and Fresh chili in the lime juice. Season with pepper powder. Stir in the olive oil, garlic Chopped, Red onion, tomato, and cilantro or spring Onion. Gently mix in the salmon, then cover, and refrigerate for 4 hours.
Step 2 :
To serve, drain the excess liquid from the salmon dice, then gently stir in the avocado dice, and
Mixed with the sauce from step One, which allows it to rest at room temperature for 5 minutes.

Salmon rillettes
# Recipes ingredients :
1-) 500g Salmons fish 🐟
2-) 100g Recotta cheese 🧀
3-) 10g Garlic 🧄
5-) 50g of chive leaf 🌿
6-) 1 tbsp Mastered
7-) 2 tbsp Olive oil
8-) 1/2 of lemon 🍋 juice
9-) salt & pepper

cooking 🍳
-) Rinse the salmon and dry it using the kitchen roll , cut it into cubes
-) place it in the steaming basket 🧺
-) Peel and 🪓 chop the clove
garlic
-) wash and mince the chive
Pure the water into the bowl 500ml , set the Temperature 102°C bring to the boil
-) insert the steaming basket and the splash guard, set a time for 7 minutes
-) leave to cook , One cooked , leave to cool
-) place all the ingredients into the food processor in the high speed outlet and set the stirring and speed the chop for 2 minutes,
-) place seasoning and place the terrine dish chilling for 10 minutes before serving with toast .

Famous Cambodia food loklak

# Recipe ingredient
200 gr of beef tenderloin local
sauce made
1. 1 tbsp of light soya sauce
2. 2 tbsp of oyster sauce
3. 1 ½ tsp tomato sauce
4. 1 tsp sugar
5. 1 tsp ground black pepper
6. 1tsp fish sauce
7. 1tsp chicken powder
8. 5 pcs garlic (chopped)
9. 2 tbs vegetable oil
10. 1tsp sesame oil
11. 2tsp corn starch
12. 150ml of chicken stock or VG stock

sauce
1. 1 lime juice
2. 2 tsp of ground black pepper
3. 1 tsp salt
4. 1 tbsp of water
5. 1 tsp of chicken powder

Method
Cut beef into cubs’ stripes
After start to prepare the sauce by adding in a bowl soy sauce, oyster sauce, fish sauce, chicken powder, sugar, black pepper, and minced garlic. Mix well
Add the beef cube to the sauce and allow to marinate for at least 30 minutes
Heat a large wok over high heat and add a tablespoon of oil. When the oil is hot, add the marinated beef and moving around the wok energetically, sear the beef for about 1-2 minutes per side, until it is cooked to your desired level of doneness (rare, medium, well done). and add some chicken stock or vegetable stock, sesame oil, and starch (mixed with water and stir it till mix well, and drop to the beef to be a combination of meat and sauce together.

Method :
Prepare the lime pepper dipping sauce by mixing a small container of freshly ground black pepper, salt, and fresh lime juice.
Decorate the two plates with lettuce, sliced tomatoes, Onion ring and cucumbers, and spread the cooked beef evenly
