Raise your hand if you’ve ever been told to pair your Asian food with Riesling 🙋 Bangkok-based Burmese-American sommelier Ottara Pyne wants you to know that there’s a much bigger, better world of pairing beyond a semi-sweet white. Drawing in part on sommelier Miguel de Leon’s writing on decolonizing w**e, Pyne challenges a pairing culture built around European flavors and course-by-course dining. At an Asian table, where dishes are often shared and flavors arrive all at once, Pyne argues we should be looking for w**es that can move across heat, acid, sweetness, herbs and umami, and trust what tastes good over inherited rules.
