Mini Cookie Balls Recipe

Makes lots of tiny cookies

Ingredients

* 125 g butter (soft)
* 100 g sugar
* 1 egg
* 1 tsp vanilla
* 180 g flour
* 1/2 tsp baking soda
* Pinch of salt
* Chocolate chips or nuts (optional)

Method

1. Heat oven to 170°C.
2. Mix butter + sugar until smooth.
3. Add egg and vanilla.
4. Mix flour, baking soda, and salt separately, then add.
5. If using chocolate chips, add a small amount.

Making Them Tiny

* Roll dough into small balls about marble size.
* Put them on baking paper with space between them.
* Slightly press each ball with your finger or leave round.

Bake

* Bake 7–10 minutes only.
* Remove when edges become light golden.

For perfectly equal small balls, you can use:

* a small teaspoon
* melon baller
* piping bag

Egyptian Rokak with Minced Beef, Cheese & Tomato Sauce

Ingredients:
- 500 g spring roll sheets
- 500 g minced beef
- 1 large onion, finely chopped
- 2 tbsp butter or ghee
- Salt and black pepper
- Pinch of cinnamon or allspice (optional)

Cheese:
- Mozzarella slices
- Red cheddar cheese

Tomato Sauce:
- 2 tbsp tomato sauce or pizza sauce

Broth Mixture:
- 4 cups warm beef broth
- 2 tbsp melted butter or ghee

Instructions:

1. Cook the filling:
- Sauté the onion in butter or ghee until soft.
- Add minced beef and cook until browned.
- Season with salt, black pepper, and optional spices.
- Add tomato sauce and cook for 2 more minutes.

2. Prepare the layers:
- Mix warm broth with melted butter.
- Grease a baking tray.
- Quickly dip each spring roll sheet into the broth mixture and layer in the tray.
- Make half of the layers first.

3. Add filling:
- Spread the minced beef mixture evenly.
- Add mozzarella slices and red cheddar cheese on top.

4. Finish layering:
- Add the remaining spring roll sheets.
- Pour a little extra broth on top.
- Brush with butter or ghee.

5. Bake:
- Bake at 200°C for 25–30 minutes until golden brown.
- Broil for the last 5 minutes for extra crispiness.

Serve hot. ゚

Egyptian Shakshouka with Spinach (Ready-to-Cook Recipe)

Ingredients:
- 3–4 ripe tomatoes (or 1 can crushed tomatoes ~400g)
- 2–3 eggs
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 small green bell pepper (optional, sliced)
- 1–2 handfuls fresh spinach (or frozen, well-drained)
- 1–2 tbsp oil
- Salt & black pepper (to taste)
- 1 tsp cumin
- Chili flakes or fresh chili (optional)
- Fresh parsley or coriander (for garnish)

Method:
1. Heat oil in a pan over medium heat. Add chopped onion and cook until soft.
2. Add garlic and bell pepper, cook for 1–2 minutes until fragrant.
3. Add tomatoes, salt, pepper, cumin, and chili. Simmer until thickened (5–10 minutes).
4. Add spinach and cook briefly until wilted (about 1 minute).
5. Make small wells in the sauce and crack the eggs into them.
6. Cover and cook until eggs are done to your liking.
7. Garnish with fresh herbs and serve hot with bread.

Notes:
- If using frozen spinach, squeeze out excess water before adding.
- Let the tomato sauce reduce well before adding spinach to avoid a watery texture.
- Optional: top with feta or white cheese for extra flavor.
