Craving a quick and delicious meal? This Shrimp Fried Rice comes together in a flash! Perfect for busy weeknights! 🥡🍤🍚
Ingredients:
- 1 C Rice (cooked according to package)
- 1/2 T Oyster Sauce
- 1 lb Shrimp (peeled and deveined, seasoned with a dash of salt)
- 1/4 tsp Mirin
- 1/2 pkg of Frozen peas and Carrots
- 1/4 tsp Salt
- 2 Eggs (beaten)
- 1 T Canola oil
- 1/2 C Soy Sauce
- 1 tsp Chinese Five Spice
Directions:
1. Start by heating your wok or skillet over medium heat. Add in the canola oil and wait for it to shimmer. Once it’s hot, toss in the seasoned shrimp and cook for just about 2 minutes. You want them pink and just cooked through, then remove them and set aside.
2. Next, throw those frozen peas and carrots into the skillet. Stir for around 2 minutes until they’re heated through.
3. Now it’s time for the rice! Add your cooked rice to the skillet and fry it up for about 30 seconds. Then, stir in the soy sauce, mirin, Chinese five spice, and salt. Get everything well combined!
4. Make a little opening in the center of the wok and pour in your beaten eggs. Let them set for about 2 minutes before you start scrambling them with a wooden spoon. Add a dash of salt here too. Once they're cooked, bring back the shrimp into the pan.
5. Toss everything together and let it cook a bit longer, until the shrimp are fully cooked. Serve hot and don’t forget to sprinkle on some green onions for a fresh finish!
