Crispy on the outside, melty on the inside—these Cheesy Ground Beef Quesadillas are the ultimate quick and satisfying meal! Packed with seasoned beef, gooey cheese, and a golden tortilla crunch, they make the perfect lunch, dinner, or snack.
Ingredients
1 lb ground beef
½ small onion, finely diced
2 cloves garlic, minced
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon crushed red pepper (optional, for heat)
½ cup salsa (or diced tomatoes)
1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
4 large flour tortillas
2 tablespoons butter (or oil, for frying)
Instructions
1️⃣ Cook the beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
2️⃣ Sauté aromatics: Add diced onion and garlic, cooking for 2-3 minutes until softened. Stir in chili powder, cumin, paprika, salt, black pepper, and crushed red pepper.
3️⃣ Add salsa: Mix in salsa and let simmer for 2-3 minutes until slightly thickened. Remove from heat.
4️⃣ Assemble the quesadillas: On half of each tortilla, sprinkle a layer of cheese, add a scoop of seasoned beef, then top with more cheese. Fold the tortilla in half.
5️⃣ Cook until crispy: Heat a skillet over medium heat with a little butter or oil. Cook each quesadilla for 2-3 minutes per side, until golden brown and crispy.
6️⃣ Slice & serve: Let the quesadillas cool slightly before cutting into wedges. Serve with sour cream, guacamole, or extra salsa!
