Jerk Shrimp Fettuccine

Zutaten
- 8 oz fettuccine pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp jerk seasoning
- 2 tbsp olive oil
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish

Zubereitung

1. Start by cooking the fettuccine in a big pot of salted water, just as the package says. Once it's perfectly al dente, drain and set aside.
2. Toss your shrimp in a mixing bowl with the jerk seasoning, making sure every single one is coated in those bold, spicy flavors.
3. Heat up the olive oil in a large skillet over medium heat. Add the shrimp and cook until they’re pink and just firm—about 3-4 minutes. Remove them to a plate for now.
4. In the same skillet, slide in the bell pepper, onion, and garlic. Sauté until they're soft and fragrant, stirring now and then.
5. Lower the heat to gentle, pour in the heavy cream, and stir everything together until it starts to look rich and creamy.
6. Sprinkle in the Parmesan cheese and season with salt and pepper, tasting as you go to get it just right.
7. Now add the cooked fettuccine, tossing everything so the pasta soaks up that dreamy sauce.
8. Return the shrimp to the pan and let it all warm through for a minute or two.
9. Finish with a shower of fresh parsley, plate up, and dig in while it's still piping hot.

🌶️🌿🐔🥦🧀✨ Greek Chicken Alfredo Bowl with Basil-Chili Feta Cream & Crispy Asparagus
Get ready for a delightful bowl bursting with Mediterranean flair! This dish brings together juicy, spice-kissed Greek-style chicken and perfectly roasted asparagus, crisped with garlic butter. Everything is enveloped in a luscious Alfredo sauce paired with a lively basil-chili whipped feta for extra flavor. A finishing sprinkle of savory sun-dried tomato crumble takes this meal to a new level of deliciousness.

Yields: 2-3 servings
Prep time: 25 minutes (plus chicken marinating)
Cook time: 25-30 minutes

Ingredients:

🍗🌶️ Zesty Greek Marinated Chicken:
1 lb boneless, skinless chicken breasts, cut into ½-inch slices or bite-size pieces
2 tbsp olive oil
4 cloves garlic, minced 🧄
1 tbsp Greek seasoning mix (contains oregano, thyme, garlic powder, onion powder, etc.)
½ tsp red pepper flakes (use more or less for heat)
Salt and freshly ground black pepper, as needed

🥦🧄 Garlic Butter Asparagus:
1 bunch (about 12 oz) asparagus, ends trimmed
1 tbsp olive oil
1 tbsp unsalted butter, melted 🧈
3 cloves garlic, minced 🧄
Salt and black pepper, as needed

🌿🧀 Sauce: Alfredo with Basil-Chili Whipped Feta
Basil-Chili Whipped Feta:
4 oz feta cheese, crumbled 🧀
¼ cup plain Greek yogurt (full fat is best for creaminess)
¼ cup packed fresh basil 🌿
1-2 tsp red pepper flakes (spice to your liking) 🌶️
1 tbsp fresh lemon juice 🍋 (optional)
1 tbsp olive oil

Alfredo Base:
2 tbsp unsalted butter 🧈
3 cloves garlic, minced 🧄
1½ cups heavy cream
1 cup grated Parmesan cheese 🧀
Salt and pepper to taste

✨ Sun-Dried Tomato Crumble:
¼ cup sun-dried tomatoes (oil-packed and drained, or dry and rehydrated), finely chopped
2 tbsp panko breadcrumbs
1 tbsp olive oil
1 tbsp chopped fresh parsley (optional)

Instructions:
To make Garlic Butter Asparagus:
Preheat the oven to 200°C (400°F) and line a baking tray with parchment.
Toss asparagus spears with 1 tbsp olive oil, melted butter, minced garlic, salt, and pepper in a bowl.
Place them on the tray in one layer and roast for 10-15 minutes, until just tender and golden at the edges.

To make Spicy Greek Chicken:
While the asparagus cooks, combine chicken with 2 tbsp olive oil, minced garlic, Greek seasoning, red pepper flakes, salt, and pepper. Marinate for at least 15 minutes.
Heat a grill pan or large skillet over medium-high heat. Cook chicken pieces for 5-7 minutes (bites) or 2-3 minutes per side (cutlets), turning as needed, until browned and cooked through. Set aside.

To prepare Basil-Chili Whipped Feta:
Blend crumbled feta, Greek yogurt, basil, red pepper flakes, olive oil, and lemon juice (if using) with a processor or stick blender. Process until silky-smooth, scraping the bowl as needed. Set aside.

To prepare Alfredo Sauce:
In a skillet or saucepan, melt 2 tbsp butter over medium warmth.
Stir in minced garlic and cook for about 30 seconds for aroma.
Add 1½ cups heavy cream and bring just to a simmer, stirring from time to time.
Blend in the Parmesan cheese until the sauce is creamy and smooth. Season with salt and pepper. Keep on low heat.

For Sun-Dried Tomato Crumble:
Heat 1 tbsp olive oil in a small skillet over medium heat. Add chopped sun-dried tomatoes and breadcrumbs.
Cook, stirring often, for 3-5 minutes until golden and crispy. Stir in parsley if desired. Set aside.

To assemble:
Fold cooked spicy Greek chicken into the Alfredo sauce, stirring gently to coat.
Add spoonfuls of basil-chili whipped feta to the sauce and lightly swirl in, leaving visible streaks for a marbled look.
Arrange garlic butter asparagus in bowls or on plates.
Top with generous spoonfuls of the cheesy Greek Chicken Alfredo, showing off those feta swirls.
Finish with a hearty sprinkle of the sun-dried tomato crumble.

Serve right away and savor each bite of this flavorful, deeply satisfying bowl!

Tips for Best Results:
Get your feta and yogurt to room temperature before whipping for a smoother texture. Add a splash more olive oil or lemon if needed for creaminess.
Keep an eye on your asparagus to avoid overcooking.
Control the chili flakes for your perfect spice level in both chicken and feta whip.
Ensure the crumble gets crisp for the best crunch and depth of flavor.
If your Alfredo turns out extra thick, a splash of warm broth or milk will loosen it up.

Relish this superb and deeply enjoyable meal!

Make the Red Pepper Whipped Feta
Combine feta, roasted red peppers, yogurt, olive oil, and red pepper flakes in a food processor and blend until ultra-creamy. Taste to adjust seasoning.

Assemble and Serve
Fill bowls with Alfredo-coated pasta. Layer with sliced chicken, roasted vegetables, and a dollop of whipped feta. Finish with fresh herbs and lemon wedges if you like.
