Ingredients:

1 lb boneless, skinless chicken breasts, cut into ½-inch slices or bite-size pieces
2 tbsp olive oil
4 cloves garlic, minced 🧄

½ tsp red pepper flakes (use more or less for heat)
Salt and freshly ground black pepper, as needed

1 bunch (about 12 oz) asparagus, ends trimmed
1 tbsp olive oil
1 tbsp unsalted butter, melted 🧈
3 cloves garlic, minced 🧄
Salt and black pepper, as needed
🌿🧀 Sauce: Alfredo with Basil-Chili Whipped Feta
Basil-Chili Whipped Feta:
4 oz feta cheese, crumbled 🧀
¼ cup plain Greek yogurt (full fat is best for creaminess)
¼ cup packed fresh basil 🌿
1-2 tsp red pepper flakes (spice to your liking) 🌶️
1 tbsp fresh lemon juice 🍋 (optional)
1 tbsp olive oil
Alfredo Base:
2 tbsp unsalted butter 🧈
3 cloves garlic, minced 🧄
1½ cups heavy cream
1 cup grated Parmesan cheese 🧀
Salt and pepper to taste
✨ Sun-Dried Tomato Crumble:
¼ cup sun-dried tomatoes (oil-packed and drained, or dry and rehydrated), finely chopped
2 tbsp panko breadcrumbs
1 tbsp olive oil
1 tbsp chopped fresh parsley (optional)
Instructions:
To make Garlic Butter Asparagus:
Preheat the oven to 200°C (400°F) and line a baking tray with parchment.
Toss asparagus spears with 1 tbsp olive oil, melted butter, minced garlic, salt, and pepper in a bowl.
Place them on the tray in one layer and roast for 10-15 minutes, until just tender and golden at the edges.
To make Spicy Greek Chicken:
While the asparagus cooks, combine chicken with 2 tbsp olive oil, minced garlic, Greek seasoning, red pepper flakes, salt, and pepper. Marinate for at least 15 minutes.
Heat a grill pan or large skillet over medium-high heat. Cook chicken pieces for 5-7 minutes (bites) or 2-3 minutes per side (cutlets), turning as needed, until browned and cooked through. Set aside.
To prepare Basil-Chili Whipped Feta:
Blend crumbled feta, Greek yogurt, basil, red pepper flakes, olive oil, and lemon juice (if using) with a processor or stick blender. Process until silky-smooth, scraping the bowl as needed. Set aside.
To prepare Alfredo Sauce:
In a skillet or saucepan, melt 2 tbsp butter over medium warmth.
Stir in minced garlic and cook for about 30 seconds for aroma.
Add 1½ cups heavy cream and bring just to a simmer, stirring from time to time.
Blend in the Parmesan cheese until the sauce is creamy and smooth. Season with salt and pepper. Keep on low heat.
For Sun-Dried Tomato Crumble:
Heat 1 tbsp olive oil in a small skillet over medium heat. Add chopped sun-dried tomatoes and breadcrumbs.
Cook, stirring often, for 3-5 minutes until golden and crispy. Stir in parsley if desired. Set aside.
To assemble:
