BEEF AND BELL PEPPER STIR FRY 😋
INGREDIENTS
Lean beef or lamb, vegetable oil, bell peppers, hot peppers, onions, salt and baharat seasoning from .uk (Baharat Seasoning- A staple in Eastern Mediterranean cooking, is a warm spice blend that typically includes black pepper, cardamom, cloves, cumin, nutmeg coriander and paprika)
METHOD

1- Heat some vegetable oil in a large wok or frying pan over medium-high heat; sauté beef until browned, 3 to 5 minutes.
2- Add sliced bell peppers, hot pepper, onions and season with salt and baharat spice.
3- Continue to cook and stir until vegetables are tender.

Grilled Chicken Kebabs 😋😍
INGREDIENTS
1 kg minced boneless and skinless chicken thighs
1 large onion, grated and strained to remove excess fluid
1/2 cup finely chopped fresh coriander
Salt, pepper, cayenne pepper, paprika, onion powder to taste
3 cloves garlic, minced
1 tbs Fresh ginger, minced
2 to 3 tbs olive oil
METHOD

1- Place all ingredients above in a bowl and mix well with your hands until well combined.

2- Wetting your fingers and palms with water or oil, shape the mixture into equal size patties.
3- Preheat oven to high broil
4- Place kababs on a silicon baking mat or nonstick baking tray and broil for 8-10 minutes on one side, flip over and grill until golden brown or until cooked through.
5- Serve with salad and yogurt dip

Chicken with Veggies 🌶🥕🥔 ...
INGREDIENTS
3-4 skinless & boneless chicken pieces (Breast or thighs)
2 lemons, squeezed.
5-6 cloves of garlic, minced
1 Tbs of onion powder
2 tsp Italian seasoning
1 tbsp pesto
1 tbsp balsamic glaze
Carrots, baby potatoes, bell peppers
Olive oil
1/2 to 1 cup of vegetable stock or hot water
METHOD...
** Season the chicken with salt, pepper and onion powder.
** In a nonstick pan heat some oil and stir fry the potatoes, carrots and peppers on medium heat for about 2-3 minutes. Move and set aside.
** Using the same pan sear the chicken on each side on medium heat until slight golden, then add the stir fried vegetables back to the pan that has the chicken.
* * In a bowl, mix the minced garlic, stock or hot water, onion powder, salt, pepper, Italian seasoning, vinegar and pesto and pour over the chicken and veggies..
** Stir gently then cover pan and cook on low to medium heat until chicken and potatoes are cooked through.
* Add the lemon juice, simmer for a few minutes then serve immediately with bread, rice, quinoa, couscous or on its own. Garnish with chilli flakes and enjoy 😉

Seared Beef Bowl 🍚 🥬 🌶 🥑
Prepare the sauce by adding the following in a jar and mix well.
4 tbs rice vinegar
4 tbs soy sauce
2 garlic cloves, pressed or finely minced
1 to 2 tsp ginger, grated or finely minced
A handful of finely chopped spring onions
1 tbs sesame oil
1 tsp of sesame seeds
1 tsp chilli oil
Salt to taste
Chopped fresh red chilli (optional)
:
Pan sear the strips of beef in a hot pan with a drizzle of oil, salt and pepper. Do not over cook.
Serve with steamed pak choi, avocados, toasted seaweed and steamed broccoli over cooked jasmine rice. Pour over as much sauce as desired.
Serve immediately
Save the rest of the sauce in the fridge for later use)

Brunch Idea 😋😍
Sautéed oyster mushrooms and baby potatoes (half boil the potatoes before sautéing) in olive oil, seasoned with garlic, salt and pepper.
Served with sunny side-up eggs avocados and dried dill seasoned smoked salmon.

1 Cup Heavy Cream or milk

Garlic Mushroom Chicken Thighs 😍😋

Ingredients
▢ 6 boneless skinless chicken thighs
▢ 1 teaspoon onion powder
▢ 1 teaspoon garlic powder
▢ ½ teaspoon paprika
▢ ½ teaspoon dried thyme
▢ ½ teaspoon ground black pepper
▢ ½ teaspoon salt
▢ 2 tablespoons olive oil
▢ 2 tablespoons unsalted butter
▢ 8 oz brown mushrooms sliced
▢ 1 tablespoon garlic finely chopped
▢ Salt & pepper
▢ Chopped parsley to garnish

Instructions
In a small bowl combine the ingredients; onion powder, garlic powder, paprika, thyme, black pepper and salt.
Season the chicken thighs with the prepared spice mix evenly.
Heat a large skillet with oil on a medium flame, add the chicken thighs and sear for 9-10 minutes until they turn golden on both sides. Transfer them to a plate and set aside.
To the same skillet add the butter. Once the butter is melted, add mushrooms and garlic. Saute for 3-5 minutes and season the mushrooms with salt and pepper.
Transfer the chicken back to the skillet and garnish the chicken thighs with chopped parsley and serve over mashed potato.
