Sunny Side Power Breakfast 🍳🥑🍞
Ingredients:
3 eggs (fried sunny side up) 🍳
1/2 avocado, sliced 🥑
1 handful of fresh spinach or arugula 🌿
1/2 cup sautéed mushrooms 🍄
2 slices of tomato 🍅
1 slice of toasted bread 🍞
Salt, black pepper, and chili flakes to taste 🌶️
Fresh parsley for garnish 🌱
Instructions:
1. Heat a pan and fry the eggs sunny side up until whites are set and yolks are runny.
2. In another pan, lightly sauté mushrooms with a drizzle of olive oil, salt, and pepper.
3. Arrange spinach, avocado, mushrooms, and tomato slices on a plate.
4. Add the eggs and toast on the side.
5. Sprinkle with chili flakes and chopped parsley for extra flavor.
