【Detox Green Smoothies with Avocado🥑】

✨ Ingredients: (for 2 servings)
1 cup frozen mango chunks
1/4 cup peeled and diced cucumber
1/4 cup diced avocado
1/2 - 1 tbsp pure maple syrup
1 tbsp chia seeds
Splash of vanilla extract
1 (1 inch) piece fresh ginger, peeled and minced
1 cup packed fresh baby spinach leaves
1 cup unsweetened vanilla almond milk

🧑‍🍳 Instructions:
1️⃣ Add all the ingredients to a blender and process until smooth. Add additional milk if needed to get it going in the blender.

2️⃣ Serve immediately (because the avocado and chia seeds thickens up fast, stir it up with a spoon before drinking to loosen✨)

【Pan Bagnat (French Tuna Sandwich)】

✨ Ingredients: (for 4 servings)
1 baguette 🥖
370 g canned tuna
2 eggs
1/2 clove garlic
2 anchovies
50 g jarred pitted Kalamata olives
2 tomatoes
1 red onion
2 tbsp capers
2 tbsp sherry vinegar
4 tbsp olive oil
10 g basil
Salt
Pepper

🥣 Utensils needed:
Pot, 2 cutting boards, knife, bowl (small), bowl, serrated knife, plastic wrap

🧑‍🍳 Instructions:
1️⃣ Cook eggs in boiling water for ⏱8 minutes, or until hard-boiled. Run under cold water, peel, and cut into slices. Thinly slice garlic and finely chop anchovy fillets. Roughly crush the olives by hand and thinly slice tomatoes and onions. Transfer onion slices to a bowl and cover with cold water. Let sit for approx. ⏱10 minutes, this helps remove some of the sharp, rawness from the onions. In another bowl, combine the tuna, garlic, anchovies, capers, olives, and sherry vinegar. Gently mix to combine, trying not to smash the tuna.

2️⃣ Slice the baguette lengthwise and remove some of the soft crumb from the top and bottom of the bread to make room for the fillings. Drizzle with olive oil and sprinkle with vinegar, salt and pepper.

3️⃣ Evenly spread tuna mixture on the bottom of the baguette. Top with red onions, egg slices, tomatoes, and basil leaves. Drizzle with more olive oil and season with salt and pepper.

4️⃣ Fold shut and wrap tightly in plastic wrap. Weigh down with a cutting board for about ⏱20 minutes. Cut into portions immediately or keep refrigerated for up to ⏱2 hours before serving. Enjoy~✨

【Homemade Mochi Ice Cream】

✨ Ingredients: (6 pieces)
50 g glutinous rice flour
200 g ice cream
100 mL water
100 g sugar
50 g tapioca starch
Assorted food colouring

🥣 Utensils needed:
Ice cream scoop, muffin liner, baking sheet, bowl, whisk, plastic wrap, microwave, rubber spatula, rolling pin, cookie cutter

🧑‍🍳 Instructions:
1️⃣ Scoop the desired ice cream flavour into balls and place in silicone muffin molds. Transfer to freezer and let chill while preparing the mochi dough.

2️⃣ Mix sticky rice flour, water, and sugar in a bowl while whisking until you get a smooth, lump-free paste. At this point, you can also add a few drops of food colouring, if desired. Cover with plastic wrap and microwave the mixture for approx. ⏱4 minutes at 600W. Remove and stir gently with a rubber spatula. Then microwave again for approx. ⏱2 minutes. Stir the mixture carefully (⚠️ Careful, the mixture is HOT).

3️⃣ Generously spread the tapioca starch on a clean work surface and place the mochi dough on it, also dusting generously with tapioca starch. Thinly roll it out with a rolling pin and then cut out 6 circles using a cookie cutting ring (approx. 10 cm/4 in. in diameter).

4️⃣ Fill each circle with a scoop of ice cream, fold over and twist together at the end to seal firmly. Transfer to freezer and let chill for approx. ⏱1.5-2 hours, or until firm. Once ready to serve, take out from the freezer and serve immediately. Enjoy🤤

【Grilled Lemony Salmon】

✨ Ingredients: (for 2 servings)
2 sheets cedar grilling wrap
400 g salmon fillets
500 g green asparagus
2 cl Cointreau
4 sprigs dill
2 tbsp honey
2 tbsp Dijon mustard
1 tbsp grainy mustard
1 lemon
Vegetable oil (for frying)
Salt

✨ Instructions:
1️⃣ Add the cedar grilling wraps to a large bowl, cover with water, add Cointreau, and let soak for approx. ⏱20 minutes. Cut the ends off the asparagus and halve them. For the sauce, finely chop the dill. Mix honey, dill, and mustard in a bowl and season with a little salt.

2️⃣ Cut the lemon in half. Cut one half into slices or quarters, grate the zest from the other half and set aside. Halve the salmon, season with salt and sprinkle the lemon zest on top. Now wrap the salmon fillet in the cedar sheets and tie closed kitchen twine. Heat a grill pan to high heat. Drizzle the surface with a little oil. Add the salmon package to the pan and cover with a smaller pan to capture the smoke. Cook for ⏱3-5 minutes on one side (this depends on the size of your salmon piece), then flip and cook a further ⏱3-5 minutes. Remove salmon once it’s cooked through.

3️⃣ Brush the asparagus with a little oil and salt. Add to the same pan with the salmon was cooked in, toasting well until cooked through but al dente, approx. ⏱3 minutes. Remove salmon from the package, serve with asparagus, and garnish with the dill mixture and lemon slices. Enjoy🌈

【Chinese Wild Garlic Pancake】

✨ Ingredients: (for 5 servings)
440 g flour
60 g wild garlic
120 mL water (hot)
90 mL water (cold)
10 g salt
50 g white sesame seeds
60 mL vegetable oil
1 tsp Chinese five-spice powder
2 tbsp sweet soy sauce
2 tbsp dark rice vinegar
1 tsp chilli oil
1 tsp sugar
Vegetable oil (for greasing, frying)

✨ Utensils needed:
Bowl (large), chopsticks, plastic wrap, kitchen towel (damp, optional), frying pan (with lid), food processor, cutting board, knife, heatproof bowl, rolling pin, pastry brush (optional), bowl (small), spatula

✨ Instructions:
1️⃣ Add flour and salt to a large bowl and mix to combine with a pair of chopsticks. Add boiling water and continue to mix well. Add cold water and use your hands to knead until a dough forms. Adjust the amount of cold water until the dough feels soft; not sticky. Cover with plastic wrap or damp kitchen towel and let rest for at least ⏱30 minutes at room temperature, or, ideally, in the fridge overnight.

2️⃣ Add sesame seeds to a frying pan over medium-low heat and toast until golden, then remove from the pan. In the same pan, heat up vegetable oil until hot but not smoking. Pulse sesame in a food processor (it doesn’t have to be super fine) or grind in a mortar and pestle. Chop wild garlic, add to a heatproof bowl with remaining flour, five spice powder, salt, and ground sesame seeds. Drizzle hot vegetable oil over wild garlic mixture and mix to combine.

3️⃣ After the dough has rested, grease a large wooden cutting board. Divide the dough into equal pieces. Roll out into a rectangle until very thin using an oiled rolling pin. Spread some of the wild garlic filling on top. Roll up into a long thin snake and stretch both sides out by pulling gently. Roll the log from both sides into a snail and set aside to rest; if you’re making a large batch, brush a thin layer of oil while they rest so they don’t dry out. Repeat with the rest of the ingredients. Flatten each disk with a rolling pin again, until you have pancakes about 7-8 inch/20 cm in diameter.

4️⃣ To make a simple dipping sauce, mix sweet soy sauce with dark rice vinegar, chilli oil, and sugar in a small bowl and set aside. Heat some vegetable oil in the same frying pan you used before over medium-low heat. Once hot, add a pancake, cover, and fry. After approx. ⏱3-5 minutes, flip the pancake. Fry until both sides are golden brown. Repeat with all remaining pancakes and serve with the dipping sauce. Enjoy~😃

【Chicken Cordon Bleu with Creamy White Asparagus】

2 chicken breasts
2 slices Gouda cheese
2 slices ham
1 kg white asparagus
1 onion
2 tbsp butter
165 g flour
80 mL white wine
200 mL water
200 mL crème fraîche
1 pinch ground nutmeg
1 pinch sugar
2 eggs
150 g breadcrumbs
3 tbsp clarified butter
Salt
Pepper
Garden cress (for garnish)

✨ Utensils needed:
Knife, cutting board, peeler, saucepan, cooking spoon, whisk, plastic wrap, meat tenderizer, bowl (large), 2 plates, frying pan, spatula, paper towels

✨ Instructions:
1️⃣ Trim white asparagus to remove the woody ends. Peel, slice lengthwise, and chop into bite size pieces. Finely dice onion.

2️⃣ Melt butter in a saucepan over medium-high heat, add onion and sauté until translucent, approx. ⏱2 minutes. Add flour and stir briefly. Then deglaze with wine and stir in the water and crème fraîche. Whisk well over medium heat to combine. Season with salt, pepper, sugar and nutmeg. Bring to a boil, whisking often and add asparagus. Let simmer for approx. ⏱10-15 minutes, covered, until asparagus is cooked through.

3️⃣ Place chicken breasts on a cutting board. Butterfly them by slicing through the middle and opening them up like a book. Cover with plastic wrap and use a meat tenderizer to flatten. Season with salt. Place a slice of ham and cheese inside each butterflied chicken breast and fold. Crack eggs into a shallow bowl and whisk well. Dip each chicken breast first in flour, then in egg, and finally in breadcrumbs.

4️⃣ Heat clarified butter in a frying pan over medium heat. Fry the chicken on each side, for approx. ⏱5-6 minutes each, until browned and cooked through. Remove from pan and drain briefly on paper towels. Serve cordon bleu over the white asparagus ragù and garnish with garden cress. Enjoy🍃

1 cup unsweetened vanilla almond milk (or favourite milk)
3 tbsp chia seeds
Liquid stevia or maple syrup to taste

✨ Instructions:
1️⃣ Place almond milk and chia seeds into a canning jar and cover with the lid. Shake until well combined.

2️⃣ Add a teaspoon of maple syrup or sweeten to taste with stevia or desired sweetener.

3️⃣ Let sit at room temperature for 10 minutes to thicken and stir or shake again. Place in the refrigerator for at least 3 hours or overnight.

【Baked Popcorn Cauliflower with Hot Honey】

1 cauliflower
100 g honey
10 g chilli sauce
100 g flour
20 g starch
50 g yogurt
130 mL water
1 tsp salt
1/2 tsp smoked paprika powder
1 clove garlic
200 g panko breadcrumbs
15 g basil
Vegetable oil (for greasing)
Flaky sea salt (for garnish)

✨ Utensils needed:
Saucepan, rubber spatula, glass jar, cutting board, knife, pot, colander, kitchen towel, baking sheet, oven, fine grater, parchment paper, pastry brush

✨ Instructions:
1️⃣ Add honey to a small saucepan over medium heat until honey is very runny. Stir in chilli sauce and simmer briefly, making sure it never reaches a boil. Keep stirring until well combined. Pour into a jar and set aside.

2️⃣ Divide cauliflower into small florets. Bring a large pot of water to a boil, salt generously, and add the florets. Let boil for approx. ⏱3-4 minutes. Drain and transfer to a kitchen towel-lined baking sheet to dry.

3️⃣ Preheat the oven to 200°C/400°F. In a deep plate, mix together flour, starch, yogurt, water, salt and smoked paprika. Grate garlic over the plate with a fine grater and mix everything to combine. Add panko breadcrumbs to a separate deep plate. Dredge cauliflower florets in the yogurt mixture, then roll in panko.

4️⃣ Grease and line a baking sheet with parchment paper. Then grease the parchment paper. Spread cauliflower on top and let bake for approx. ⏱30 minutes. Brush some basil with a little oil, lay over the cauliflower, and bake for approx. ⏱5 minutes more. Garnish with more basil and sprinkle with flaky sea salt. Serve crispy popcorn cauliflower with hot honey. Enjoy😉

【Easiest Bacon Sandwich🥪】

✨ Ingredients: (for 1 serving)
5 slices bacon
2 slices sandwich bread
1 tsp butter
1 tbsp sweet mustard
Ketchup (for serving)

➰tsp = teaspoon
➰tbsp = tablespoon

✨ Instructions:
1️⃣ Add bacon strips to a frying pan over medium-high heat. Fry until crispy on both sides, approx. ⏱2-3 minutes.

2️⃣ In the meantime, butter each slice of bread on one side. Take the bacon out of the pan and place it on one of the slices of bread. Top with another bread slice and add back to the pan. The bacon fat and all the toasty flavours in the pan will absorb into the bread. Fry the sandwich until golden brown on the first side, approx. ⏱2 minutes. Then flip it over and weigh it down with a small saucepan and continue frying until golden brown. Cut crosswise and serve while still warm with sweet mustard. Enjoy!😋
