EP 3: THE DESSERT WITH WHISKY IN EVERY LAYER

Our last stop with The Glenlivet 12 takes us to , where dessert begins with a simple idea, what if sweetness didnโ€™t have to stay predictable?

For them, everything starts with the ingredient. Nothing is wasted, not even the parts most people usually ignore. With banana, they explore its skin, its texture, and how it transforms at every stage of ripeness.

With The Glenlivet, it becomes something more layered. The banana is roasted until it turns deep and sticky, the pastry brushed with a Glenlivet syrup as it bakes, while a Glenlivet jelly sits alongside, something that stands on its own, or completes the dish if you let it.

Because here, dessert isnโ€™t just something sweet to finish with. Itโ€™s something built to be discovered, layer by layer.

Yunnan pulled me back for the third time, but this time, it wasnโ€™t the landscapes that stayed with me, it was the women.

In the remote village of Laomudeng, I met Derung women whose faces carry something that canโ€™t be separated from memory. Fewer than ten elderly women still bear the traditional facial tattoos that once marked a girlโ€™s passage into womanhood.

Standing in front of them, I kept thinking about how womanhood is often inscribed long before we understand it, and long after we leave it behind.

latest seasonal menu, Borneo Traces, is a collaboration with and with dry flowers filling the room, Aฤ“sop's incense in the air, and a chef from Sabah who put his entire childhood onto a plate.

Chef Jack built this menu around four pillars: culture, journey, composition, and element. Every dish traces back to something real. Including the Asam Jawa Shari โ€” inspired by his late mother's pinarasakan, and the sauce he'd pour over rice, bowl after bowl.
