My first Baijiu pairing dinner experience, and it was nothing like I expected. 🍶✨
I recently attended a Huai Mao Baijiu pairing dinner at Michelin Selected .kl in collaboration with , where modern Chinese cuisine was paired with four distinct Huai Mao expressions, each showcasing a different character and depth.
Throughout the evening, guests were invited to explore the pairings freely rather than follow a rigid food-and-drink match. The lighter, more elegant expressions worked beautifully with the delicate hamachi and black pomfret, while the richer and more complex baijiu brought out the savoury flavours of the aged duck and claypot lamb bao zai fan. It was fascinating to experience how the same dish could taste completely different depending on which baijiu you paired it with.
Unlike traditional wine pairing dinners where every pairing is predetermined, this experience felt much more interactive and personal, encouraging us to discover our own favourite combinations.😍
The highlight of the night for me, however, was the finale — a Huai Mao ice cream infused with baijiu, fermented black bean, and cordyceps mushroom. Intensely aromatic, creamy, and packed with the unmistakable character of baijiu, it was a bold and memorable dessert that perfectly concluded the evening.
A fun, casual, and eye-opening introduction to China’s national spirit, paired with thoughtful modern Chinese cuisine and plenty of unexpected flavour discoveries along the way. 😁✌️
