Pink Velvet Valentine's Cupcakes 🍰💖
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the vanilla extract and red food coloring, blending until evenly mixed.
5. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the buttermilk. Mix until just combined.
6. Spoon the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
9. Once cooled, frost with your favorite cream cheese or buttercream frosting, and add sprinkles or decorations as desired.
