Antipasto Sandwich with Toasted Ciabatta and Roasted Garlic-Mayo Sauce.
Ingredients:
* 1 ciabatta loaf, split in half and sliced into sandwich-sized sections
* 4 slices provolone cheese
* 3 slices fresh mozzarella cheese
* A handful of fresh arugula
* 1-2 ripe tomatoes, thinly sliced
* 1/2 cup mayonnaise
* 3-4 cloves roasted garlic, mashed
* Juice of half a lemon
* Salt and pepper, to taste
* 6 olives, finely chopped (you can use green or black, or a mix)
* 3-4 cornichons (small pickles), finely chopped.
* 4 Basil leaves, chopped
* Red bell pepper, grilled and peeled
Instructions:
1. Roasted Garlic-Mayo Sauce:
a. In a bowl, combine mayonnaise, mashed roasted garlic, lemon juice, lemon zest , chopped olives, and chopped cornichons, chopped basil.
b. Season with salt and pepper to taste. Mix well until all ingredients are incorporated. Set aside.
2. Prepare the Ciabatta:

b. Preheat oven to 400F
b. Add the cheese on the one slice and sprinkle olive oil on the other one.
d. Toast the ciabatta slices until they’re golden brown and crispy on the outside, and cheese melted.
3. Assemble the Sandwich:
a. Spread a generous amount of the roasted garlic-mayo sauce on one side of ciabatta slice.
b. On the cheesy side of one ciabatta slice, layers of prosciutto, salami, or other cured meat.
c. Add a layer of thinly sliced tomatoes, bell pepper.
d. Add a handful of arugula.
e. Top with the other ciabatta slice, sauced side facing down.
4. Press gently to allow the ingredients to meld together slightly.
5. Serve immediately, cutting the sandwich in half if desired.
