Fish roll recipe
Ingredients:
3cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 tablespoon sugar
4 tablespoon margarine or butter, melted
1 cup of room temperature water.
1 large egg.
Fillings:
1 cooked, flaked fish (such as mackerels or titus or herring )
chopped onions
About 6 chopped scotch bonnet peppers (optional)
1 chopped bell pepper (optional)
1 teaspoon ground black pepper or grounded pepper
Seasoning cubes
Vegetable oil for frying
Prep:
In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Mix well.
Add the melted margarine or butter ,egg, water to the dry ingredients. Mix until a dough forms.
Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
Cover and let it rest for 30 minutes.
In a pan on a medium to low heat pour in oil, allow to heat up ,then pour in chopped onions, Scotch bonnet pepper,mix together then the cooked fish , seasoning cubes and ground black pepper or grounded pepper add salt to tastes and Set aside.
After the dough has rested, divide it into small balls .
Roll out each ball into a very thin straight shape
Place a spoonful of the fish mixture onto one edge of each roll out ,roll your dough up and seal the edges with water.
Continue with this process until you don't have dough on ground again.
Heat vegetable oil in a deep frying pan over medium heat.
Carefully place the fish rolls into the hot oil and fry until golden brown on all sides, about 3-5 minutes per side.
Remove the fried fish rolls from the oil and drain on paper towels.
Serve warm and enjoy your delicious fried fish rolls with cold Zobo or fruit juices π.
