White Garri and Yellow Garri: The Difference

In West Africa, particularly in Nigeria, Garri is a popular food made from cassava tubers. The difference between white and yellow garri lies in the processing and treatment of the cassava:

White Garri is made from cassava tubers that have been peeled, grated, fermented, dewatered, sieved, and then fried or roasted to remove excess moisture. It has a white or off-white colour, often has a sour taste due to the fermentation process, and can be rehydrated with water or milk to create a popular snack or side dish.

Yellow Garri is also made from cassava tubers that have been peeled, grated, fermented, dewatered, sieved, but treated with palm oil or other ingredients before frying, giving it a yellow colour. It may have a milder flavour due to the added ingredients, still has a slightly sour taste but is often sweeter than white garri. It can also be rehydratable and can be consumed in a similar way to white garri.

White Garri is typically fermented for a longer period, which allows natural bacteria to break down some of the starches into lactic acid and other compounds. This process contributes to its characteristic sour taste. The fermentation process can vary in duration and method, but it often results in a tangier flavour profile.

Yellow Garri, on the other hand, may undergo a shorter fermentation period or might be treated with ingredients like palm oil that can mask or balance out some of the sourness. The addition of palm oil or other ingredients during processing can also introduce a sweeter or richer flavour, which might counterbalance the sour taste.

The processing of Garri lowers the cyanide content. It is important to note that high level of cyanide can be harmful to humans and animals. Yellow Garri generally has lower cyanide content compared to white Garri (though the difference is not always significant). This difference is due to the processing method, where yellow garri is fried with palm oil, which helps dilute any remaining cyanide content. The palm oil adds nutritional value (Vitamins A and E) and reduces the cyanide levels, making yellow garri slightly safer in terms of cyanide exposure.

The choice between the two often comes down to personal preference regarding taste and texture. Both types are widely consumed in West Africa and can be enjoyed with various toppings or accompaniments.

White Garri and Yellow Garri can be part of a healthy diet if properly processed to minimize cyanide content. Choosing garri from reputable sources and following proper preparation methods can help mitigate potential health risks associated with cyanide consumption.
