🫘 Beans Cake (Akara) Recipe

Ingredients:

2 cups peeled beans (black-eyed peas or brown beans)

1 small onion (chopped)

1 scotch bonnet pepper (atarodo), or to taste

Salt to taste

Seasoning cube (optional)

Water (very little β€” just for blending)

Vegetable oil (for deep frying)

Optional Add-ins:

Crayfish (blended or powdered)

Chopped spring onions

Diced bell peppers

Fresh parsley or scent leaves

Instructions:

1. Peel the Beans:

Soak beans in water for about 10 minutes.

Rub the beans between your hands or pulse in a blender with water to remove the skins.

Rinse thoroughly until the skins are mostly gone.

2. Blend:

Add peeled beans, onions, and pepper to a blender.

Add very little water β€” just enough to help it blend to a thick, smooth paste.

3. Mix:

Pour the blended mixture into a bowl.

Add salt, seasoning cube, and crayfish if using.

Use a spoon or whisk to beat the batter for a few minutes to introduce air β€” this makes the akara fluffy.

4. Heat Oil:

In a deep pan, heat oil (enough to deep fry).

Use medium-high heat; test with a little batter β€” it should rise and sizzle.

5. Fry:

Scoop the batter with a spoon and gently drop into the oil.

Fry in batches, don’t overcrowd the pan.

Flip occasionally until golden brown on all sides (about 3–4 minutes per batch).

6. Drain and Serve:

Remove and drain on paper towels.

Serve hot with pap (ogi), bread, or custard.

Ingredients (serves 4):

3 cups cooked rice (preferably cold and a day old)

2 tablespoons oil (vegetable or sesame oil)

1 small onion, chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, corn, green beans)

2 eggs (optional)

2 tablespoons soy sauce

1 teaspoon curry powder or thyme (optional for Nigerian flavor)

Salt and seasoning cubes to taste

1/2 teaspoon black or white pepper

Chopped spring onions (optional)

Cooked chicken, shrimp, or beef (optional, diced)

Instructions:

1. Prepare Ingredients:

If your rice is freshly cooked, spread it on a tray and let it cool completely.

Beat the eggs and set aside.

2. Scramble the Eggs:

Heat 1 tablespoon oil in a large pan or wok.

Pour in beaten eggs, scramble until cooked, then remove and set aside.

3. SautΓ© Vegetables:

Add another tablespoon of oil.

SautΓ© chopped onions and garlic until fragrant.

Add mixed vegetables and stir-fry for 2–3 minutes.

Add diced cooked meat or shrimp and stir-fry until heated through.

5. Add Rice:

Add the cold rice to the pan.

Ingredients (for 1 sandwich):

1 bagel (plain or poppy seed, sliced)

2 large eggs

3 slices of bacon

1–2 slices cheddar cheese (or any melting cheese)

1 tsp butter or oil

Salt and black pepper to taste

Optional: hot sauce, mayo, or cream cheese

Instructions:

1. Cook the Bacon:

In a skillet over medium heat, cook bacon until crispy (about 4–5 minutes).

Drain on paper towels.

2. Toast the Bagel:

Lightly toast both halves of the bagel until golden brown. Set aside.

3. Cook the Eggs:

In the same skillet, add a little butter or oil.

Crack in the eggs, season with salt and pepper.

Cook sunny-side up or over easy β€” keep the yolk runny if you like it gooey!

4. Melt the Cheese:

Place cheese slices over the eggs while still in the pan.

Cover the pan for about 30 seconds to melt the cheese.

5. Assemble the Sandwich:

Spread a little butter, mayo, or cream cheese on the bagel if desired.

Layer the eggs with melted cheese on the bottom half of the bagel.

Add the crispy bacon strips.
