Nigerian Jollof Rice and roasted turkey:
*Nigerian Jollof Rice Recipe*
Ingredients:
- 2 cups uncooked long-grain rice
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 Scotch bonnet pepper (or habanero), chopped (optional)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and black pepper
- 2 cups tomato puree
- 2 cups beef or chicken broth
- 2 bay leaves
Instructions:
1. Heat oil in a large saucepan over medium heat.
2. Sauté onion, garlic, ginger, and Scotch bonnet pepper (if using) until softened.
3. Add cumin, coriander, paprika, salt, and black pepper. Stir well.
4. Add tomato puree and broth. Bring to a boil.
5. Add rice and bay leaves. Stir well.
6. Reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked.
*Roasted Turkey Recipe*
Ingredients:
- 1 whole turkey (3-4 kg), cleaned and patted dry
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 lemon, quartered
Instructions:
1. Preheat oven to 180°C (350°F).
2. Rub turkey with olive oil, salt, black pepper, garlic powder, paprika, and thyme.
3. Stuff turkey cavity with lemon quarters.
4. Place turkey in a roasting pan and roast for 2-3 hours or until cooked through.
*Tips and Variations*
- Use basmati or jasmine rice for a more aromatic Jollof Rice.
- Add protein sources like chicken, beef, or shrimp to Jollof Rice.
- For a spicier Jollof Rice, add more Scotch bonnet peppers or use hot sauce.
- Glaze turkey with honey or soy sauce during last 30 minutes of roasting.
*Nigerian-Style Turkey Marinade (optional)*
- Mix 1/4 cup olive oil, 2 cloves minced garlic, 1 teaspoon grated ginger, 1 teaspoon ground cumin, 1 teaspoon paprika, salt, and black pepper.
- Rub marinade on turkey and refrigerate overnight.
