Everyday in this month of Ramadan I’ll be sharing different delicious and nourishing food you can make for Iftar that your family and guests can enjoy!
On Today’s Menu We Are Making 👇🏽
Chicken Kabsa Rice
Fattoush Salad
Marble Cake
Chicken Kabsa Rice:
2 cups Basmati rice
2-3 tablespoon of oil
Half teaspoon of blended ginger
4 large carrots, Shredded
2 large tiny diced onions.
1 teaspoon of Kabsa spice
1/2 teaspoon of curry powder
1 chicken stock cube

INSTRUCTION:
Chicken Stock (water)
6 soft chicken lap/ breast in pot add cinnamon stick, black pepper seed, cloves, bay leaf, cardamom, dried ginger, nutmeg and 5 cups of water. Let it boil for 1 hour or your preferred time then set aside.
Heat oil in a deep pot over medium-high heat. Add onions and ginger. Sauté for 2-3 minutes or until the onions turn golden brown. Add shredded carrots, kabsa spice, curry powder, chicken stock cube, Season with salt and fry for 3-5 minutes. Add basmati rice and chicken. Pour in 4 cups of chicken stock (water) preferably boiled water for fast cooking. Reduce the heat, cover with aluminium foil, and simmer for 10-15 minutes. Garnish with cashew nuts and serve.
Fattoush Salad:
Lettuce
Parsley
Mint
Radish
scallions
Cucumber
Pomegranate
Lemon
Wash all the veggies, cut and mix with pomegranate, lemon juice, salt and sumac. I love Dressing and mixing the salad 3-5 minutes before serving.
Marble Cake:
I got this Super Moist ready made cake mix. All you need to do is add oil, water, eggs and bake for 30-45 minutes.
