NIGERIA JOLLOF RICE RECIPE.

Ingredients..
2 cups long-grain parboiled rice

1/4 cup vegetable oil

1 medium onion (sliced)

4 large tomatoes (or 1 cup canned tomatoes)

2 red bell peppers

1 Scotch bonnet (ata rodo)

1 tablespoon tomato paste (optional)

2 cups chicken or beef stock

1 teaspoon curry powder

1 teaspoon thyme

2 seasoning cubes (e.g., Maggi or Knorr)

Salt to taste

Instructions..
Blend tomatoes, red bell peppers, and Scotch bonnet into a smooth puree.

Heat oil in a pot, sautΓ© onions until soft, then add tomato paste (if using) and fry for 2 mins.

Add blended pepper mix and fry until the oil begins to separate (about 10–15 minutes).

Season with curry, thyme, seasoning cubes, and salt. Stir well.

Add rice and mix to coat with the sauce.

Pour in stock to cover the rice. Cover and cook on low heat until rice is done (20–30 mins), adding a bit of water if needed.

Fluff and serve with fried plantains, chicken, or salad πŸ₯—
