Homemade Fudgy Oreo Brownies

Ingredients:
• 1 cup (225g) unsalted butter, melted
• 1 cup (200g) granulated sugar
• 1 cup (200g) brown sugar
• 4 large eggs
• 1 teaspoon vanilla extract
• 1 cup (125g) all-purpose flour (≈ 2/3 cup + 2 tbsp)
• 1 cup (100g) unsweetened cocoa powder
• ½ teaspoon salt
• 12 Oreo cookies, broken into chunks
• Extra Oreos for topping (about 4–5 cookies)

Instructions:
Melt the butter and let it cool slightly. In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla until glossy and smooth.
Sift in the flour, cocoa powder, and salt. Fold gently until just combined — don’t overmix to keep it fudgy.
Add in the Oreo chunks and fold them through the thick batter.
Pour the mixture into a greased and lined 8x8-inch (20x20 cm) baking pan. Press extra Oreo pieces on top.
Bake in a preheated oven at 175°C (350°F) for 30–35 minutes, until the center is set but still slightly soft.
Allow to cool completely before slicing for the ultimate fudgy texture.

SPRING ROLL RECIPE

Ingredients
(Makes about 10–12 rolls)

For the Filling:
• 2 cups (150g) shredded cabbage
• 1 cup (100g) grated carrots
• 1 cup (100g) cooked minced chicken or beef (optional)
• ½ cup (50g) sliced green bell pepper
• ½ cup (50g) sliced onions
• 2 tbsp vegetable oil
• 2 cloves garlic, minced
• 1 tbsp soy sauce
• ½ tsp black pepper
• ½ tsp salt
• 1 tbsp cornflour mixed with 1 tbsp water (to thicken)

For the Wrappers:
• 1 cup (125g) all-purpose flour
• 1 tbsp cornflour
• ¼ tsp salt
• 1 cup (240ml) water
• 1 tbsp vegetable oil

For Sealing and Frying:
• 2 tbsp flour + 2 tbsp water (make a paste for sealing)
• Vegetable oil for deep frying

Instructions

To make the wrapper, mix flour, cornflour, salt, water, and oil into a smooth batter. Heat a nonstick pan lightly and pour a small amount to form a thin layer. Cook just until set (not brown), then remove. Repeat for all wrappers. Cover with a damp cloth to prevent drying.

For the filling, heat oil in a pan and sauté garlic and onions until fragrant. Add cabbage, carrots, bell pepper, and meat (if using). Stir-fry for 2–3 minutes. Add soy sauce, pepper, and salt. Stir in cornflour-water mixture and cook briefly until slightly thickened. Remove from heat and let cool.

To assemble, place a wrapper on a flat surface, add a spoonful of filling near one edge, fold in the sides, and roll tightly. Seal the end with the flour paste.

Heat oil in a deep pan and fry the rolls over medium heat until golden brown and crisp. Remove and drain on paper towels.

Serve hot with sweet chili sauce or spicy ketchup.

Chocolate Ganache Loaf Cake

Ingredients:

For the Cake:
• 1½ cups (190g) all-purpose flour
• ½ cup (50g) unsweetened cocoa powder
• 1 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• ¾ cup (150g) sugar
• ½ cup (120ml) vegetable oil
• 2 large eggs
• ¾ cup (180ml) buttermilk (or milk + 1 tsp vinegar)
• ½ cup (120ml) hot water or brewed coffee
• 1 tsp vanilla extract

For the Ganache:
• 150g (about 1 cup) dark or milk chocolate, chopped
• ½ cup (120ml) heavy cream

Instructions:
• Preheat oven to 170°C (340°F). Grease and line a loaf pan with parchment paper.
• In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
• In another bowl, whisk sugar, oil, eggs, buttermilk, and vanilla until smooth.
• Gradually add the dry ingredients into the wet mixture, stirring until combined.
• Pour in hot water or coffee and mix until the batter is smooth and slightly runny.
• Pour batter into the prepared pan and bake for 45–50 minutes, or until a skewer inserted in the center comes out clean.
• Cool completely before topping with ganache.

To Make the Ganache:
• Heat cream in a small pot until hot (do not boil).
• Pour over chopped chocolate and let sit for 2 minutes.

Ingredients

For the Chocolate Cake Layers
• 2 cups (250g) all-purpose flour
• ¾ cup (75g) unsweetened cocoa powder
• 1½ cups (300g) sugar
• 1½ tsp baking powder
• 1½ tsp baking soda
• ½ tsp salt
• 2 large eggs
• 1 cup (240ml) milk or buttermilk
• ½ cup (120ml) vegetable oil
• 2 tsp vanilla extract
• 1 cup (240ml) hot water or hot coffee

For the Whipped Cream Frosting
• 2 cups (480ml) heavy whipping cream (cold)
• ½ cup (60g) powdered sugar
• 1 tsp vanilla extract

For the Cherry Filling
• 1 can (425g) pitted cherries or 1½ cups (200g) fresh cherries
• ¼ cup (50g) sugar
• 2 tbsp (20g) cornstarch
• ½ cup (120ml) cherry juice or water

For Decoration
• Chocolate shavings or curls
• Whole cherries

Instructions

Prepare the cake batter by combining flour, cocoa, sugar, baking powder, baking soda, and salt in a bowl.
Whisk eggs, milk, oil, and vanilla in another bowl, then add to the dry mixture.
Pour in hot water or coffee and mix until smooth — the batter will be thin.
Pour into two greased and lined 8-inch (20cm) pans and bake at 170°C (340°F) for 35–40 minutes or until a skewer inserted comes out clean.
Cool the cakes completely before assembling.

For the cherry filling, cook cherries with sugar, cornstarch, and cherry juice until thickened, then cool.

Whip the cold cream, powdered sugar, and vanilla until stiff peaks form.

To assemble, place one cake layer on a plate, spread whipped cream, then add cherry filling.
Place the second layer, cover the entire cake with whipped cream, and decorate with chocolate shavings and whole cherries on top.

Refrigerate for at least 2 hours before serving for the flavors to set beautifully.

American Buttercream Frosting

Ingredients
• Unsalted butter – 1 cup (225g), softened
• Powdered sugar – 4 cups (480g)
• Heavy cream or milk – 3–4 tbsp
• Vanilla extract – 2 tsp
• Pinch of salt

Instructions

Beat the softened butter on medium speed until smooth, creamy, and pale in color. Gradually add powdered sugar, one cup at a time, beating well after each addition.

Add vanilla extract and a pinch of salt. Pour in the cream or milk a tablespoon at a time, mixing until the frosting becomes light, fluffy, and spreadable.

For a thicker frosting, add more powdered sugar. For a smoother or lighter texture, add a bit more milk or cream.

Use immediately to frost cakes, cupcakes, or cookies, or store in an airtight container at room temperature for up to 2 days (or refrigerate up to a week). Before reusing, rewhip to restore smoothness.
