😂 Ah watch a video of someone making edikang ikong and it's turn out to be water soup 😭 so I said lemme come give my people the REAL, rich, thick, no-play Edikang Ikong Soup recipe the Efik way 🔥🥬.

🥘 Authentic Edikang Ikong Soup Recipe

(Not the watery remix 😅)

🔥 What makes it different:

This soup is vegetable-rich, oil-rich, and protein-loaded. It must be thick, not floating. That’s law. 😤

🛒 Ingredients:

2 big bunches of fresh ugwu (fluted pumpkin leaves)

1 bunch of waterleaf (or substitute with spinach)

1 cup palm oil

Goat meat / beef

Smoked fish & stockfish

Periwinkle (optional but elite 😏)

Ponmo (cow skin)

Crayfish (blended)

Fresh pepper or scotch bonnet

Seasoning cubes & salt

Onion (for meat)

👩🏾‍🍳 How to Make It:

1️⃣ Wash & cut vegetables separately.
– Ugwu finely sliced
– Waterleaf chopped (squeeze out some water if it's too juicy)

2️⃣ Boil your proteins
– Goat meat, ponmo, stockfish + onions, seasoning, salt
– Cook until tender and stock is rich

3️⃣ Add palm oil to the meat stock
– Don’t fry. Just pour and stir
– Add crayfish and pepper, then simmer for 5–7 mins

4️⃣ Add waterleaf first
Stir in and let it cook for 5 mins
It’ll release water (this is the only water the soup needs)

5️⃣ Add ugwu last
Stir it in gently
Let everything combine and simmer for 3–4 mins
Don’t overcook the veg keep it fresh and green!

🛑 Warning:

If your soup is swimming in water — it’s not Edikang Ikong, it’s regret.
