I have always adviced that you follow your recipe to the later.

Make sure your recipe is right in front of you or besides you while you're working.

It doesn't matter how long you've been in baking, it is important we have our recipe handy and also ensure that we look at it every step of the way. It will help you not to omit, add or reduce the supposed amount of ingredient to be used.

Like I always say, when you don't have your recipe beside you and follow it, you'll end up with a different result, and your product taste will always be different.

I had an experience as shown in this video, where I didn't look at my recipe as I was about adding an ingredient to my fondant mixture , and by that singular act, the fondant didn't come out well. Fondant making gone wrong 🙆

I divided the recipe as I was adding each ingredient, but I didn't remember to divide that particular ingredient and turned out bad.

I thank God it wasn't for an order.
That's way we always need to have our recipe handy and also look at it while working to be sure. Following your exact recipe will help you avoid waste.
