Grey skies, vast green polders, and a classic windmill on the horizon, it doesn’t get more quintessentially Dutch than this.

Poffertjes snack of the day 🧡🇳🇱

Quick authentic-style recipe outline (makes ~30–40)
Activate yeast in warm milk with a little sugar.
Mix with flour, salt, and egg; let the batter rise 45–60 minutes until bubbly.

Cook in a special poffertjes pan (cast-iron pan with shallow round indentations), greased with butter.

Fill the wells, cook until bubbles form and the bottoms brown (about 1–2 minutes), flip with a skewer or fork, and finish the other side.

Serve immediately with powdered sugar and butter.

Without the special pan, some people bake them in a greased mini-muffin tin. Buckwheat flour is traditional for a nuttier taste closer to street-vendor versions.
They make a fun breakfast, snack, or dessert—light, slightly sweet, and very moreish. Enjoy!
