I followed his class from cheflix.com because there is english subtitle there since i'm not german speaking. I became obsessesd in baking a german style bread. It is not difficult and this one is not a sourdough. You need 24 hours for risen (rolate twice every 8hours) plus 45 minutes to bake. Yeast will do the job for you most of the time.
