🥜3 Ingredient Healthier No Bake Peanut Butter Brownies (No Wheat Flour, Eggs, Refined Sugar, Dairy, Butter or Oil)
👌🏻These no bake peanut butter brownies don’t require any baking or cooking. The brownies need just 3 ingredients and don’t contain any wheat flour, eggs, refined sugar, dairy, butter or oil. The brownies also store well.😋
Ingredients:🥜
✅️1 packed cup (160g) pitted Medjool date halves see note before starting
✅️1/2 cup (128g) unsweetened natural peanut butter with no added oils
✅️1/4 cup (22g) superfine blanched almond flour
Instructions:➡️➡️➡️➡️➡️➡️➡️➡️
✅️Line an 8 x 4 inch loaf pan with parchment paper.
✅️Add dates, peanut butter and almond flour to a food processor. Pulse on high until the dates are fully broken down and the mixture becomes uniform in color and texture. You may need to stop your food processor and scrape the sides and bottom to help everything evenly mix. Your mixture should be light brown and slightly crumbly, resembling soft brown sugar in appearance. See photo in post for reference.
✅️Your mixture should look crumbly but when you pinch it together, it should stick. If it doesn't stick, you can add a little water, a little more peanut butter or a little more dates and blend again until your mixture will stick together.
✅️Transfer the mixture to your prepared pan. Firmly press the mixture evenly across the pan. Use your fingers and palms to really compress your dough so that it sticks together. It should look solid and not crumbly. 💫See photo in post for reference.
✅️Place brownies into fridge for about 1 hour. This will let the dough firm up, making it easier to slice. If desired, you can also drizzle the brownies with melted chocolate or add a frosting before serving. Store uneaten brownies in the fridge or freezer in an airtight container.
⚠️Notes✋🏼
Dates note: You want to use Medjool dates for this recipe because they have more soft flesh. You will also want to use fresh, soft dates. If your dates are a little dry, you can rehydrate them in warm water (soak them for about 15 minutes in warm water and then drain and pat dry) before using.
