🥧 The BBQ Gamer’s Signature Key Lime Pie
(Deep Dish, Whole Egg, Biscoff Crust – Momento Maison 27 cm White Dish)
🍪 Crust (per pie)
250 g Biscoff cookies, finely crushed (~32–34 cookies)
100 g (7 Tbsp) unsalted butter, melted
Pinch of salt (optional, skip if using salted butter)
Instructions:
Preheat oven to 180 °C (fan).
Mix crumbs, butter, and salt until evenly moistened.
Press firmly into bottom and up the sides of your 27 cm Momento Maison deep-dish pie plate.
Bake 8–10 minutes, until set and fragrant. Cool slightly before adding filling.
🍋 Filling (per pie)
8 whole eggs
1 cup (228 g) fresh lime juice
Blend of supermarket Persian/Tahitian limes (for brightness) and ripe yellow Key limes (for authentic tart-sweet depth).
8 tsp (2 Tbsp) lime zest – ideally from the ripe yellow limes
2 cans (28 oz / 794 g total) sweetened condensed milk
Instructions:
Zest limes first until you have 8 tsp.
Juice limes, strain through a fine mesh.
In a large bowl, whisk eggs until smooth. Add zest.
Whisk in condensed milk until thickened and pale (~2 minutes).
Whisk in lime juice until silky.
Pour filling into cooled crust – it will reach almost to the brim.
🔥 Bake
Place pie dish on a baking sheet for stability.
Bake at 180 °C (fan) for about 45–55 minutes in deep-dish stoneware.
Test doneness:
Edges set and matte.
Center still glossy and wobbles like soft Jell-O, not liquid.
Internal temperature ~165–170 °F (74–77 °C).
Cool on a rack for 30–40 minutes, then refrigerate 4+ hours (overnight best).
🌀 Lime-Infused Whipped Cream (per pie)
1 cup (240 ml) heavy cream, cold
2 Tbsp (25 g) powdered sugar
1 tsp lime juice
½–1 tsp lime zest
½ tsp vanilla extract (optional)
Instructions:
Chill bowl and beaters.
Whip cream until it begins to thicken.
Add sugar, juice, zest, and vanilla.
Continue whipping to soft or firm peaks.
Smother, pipe, or swirl over chilled pie before serving.
🍽️ Serving
Slice with a hot knife, wiping clean between cuts for bakery-style wedges.
Expect firmer edges for structure, with a creamy custard center.
Flavor: perfectly tart + sweet balance, with spiced caramel notes from the Biscoff crust.
