Sausage Review #5
This time I recruited a few mor taste testers. I got the BBQ fired up while the lads shot up the hill on the quad to help recover a big Samba Stag. When they all got back everyone was pretty hungry, so we got stuck in.
We had five flavours to try:
1. Chorizo
2. Roast Beef & Mustard
3. Pork, Apple, Rosemary & Sage
4. Wagyu Brisket, Jalapeño & Cheese
5. Black Rock Pork
The clear favourite overall was the Chorizo, and it was definitely my favourite too. This was one of the best flavoured chorizos I've had. It didn't taste like your standard packet chorizo. It had a really nice tomato and paprika flavour, like a good classic Spanish chorizo, with very little heat. We really enjoyed it.
The Roast Beef & Mustard came in a very close second. It was super juicy, had a nice coarse grind with chunky bits, and was just bursting full of flavour. This is the kind of sausage where it would almost be insulting to add tomato sauce. It was really, really good, and I'd definitely buy them again.
The Wagyu Brisket, Jalapeño & Cheese was good, but if I'm being honest, it could have done with a bit more cheese. I didn't really notice much of the cheese or the jalapeño.
The Pork, Apple, Rosemary & Sage was also really good, with its own flavour and texture.
The Black Rock Pork was nice as well.
Overall, I highly rate these sausages. The texture was fantastic, and each one had its own texture. It wasn't just generic. Some were super chunky, while the pork was smooth and emulsified.
The flavours weren't overpowering either. You can tell this is a butcher that knows what they're doing with sausages.
These aren't just sausages that have been smashed through the mincer, mixed with some generic sausage meal and had a bit of flavouring thrown in. Each one feels like it has been made very purposefully.
Definitely someone who takes their product very seriously.
I'd definitely stop in again and try some more flavours.
