I was finishing a 90th birthday cake for my aunty on Saturday morning when I had an "ah ha" and "hmm" moment.
There was quite a mess everywhere. I had everything spread out, sticky fingers and my husband had the "I'm not sure this is going to work" look on his face.
But for me I knew it was all going to work out and I reminded myself of the 12-tier wedding cake I made for friends and a 50th cake I made for another.
Every time, I start with a clear picture of the final cake and what I want it to look like.
But the process of getting there is always a little organic (and messy).
I gather the ingredients, pull things apart, adjust as I go, and somehow it all comes together beautifully in the end.
