October 25 is The World Pasta Day!

And for my entry, I made this super yummy Cheese Penne Pasta Bake using Arrabbiata Sauce and Penne Pasta
perfect for the up coming Holiday Season!

Ingredients:
500g Barilla Penne Rigate
1 Jar Barilla Arrabbiata Sauce
350g Italian Sausage, removed from casing
2 garlic cloves
mushrooms
rosemary
3 cups spinach
fresh ricotta
80g Parmigiano Reggiano (grated)
50ml olive oil
Rock salt for pasta water (7g of rock salt per litre of water)
salt and pepper to taste
1 cup pasta water

Crispy Pork Binagoongan sa Gata with McCormick Thai Kitchen Coconut Cream

Pork Binagoongan is a Classic Filipino Dish, A delicious combination of sweet, salty and for this recipe, creamy.

And to level up our ulam! I used McCormick Thai Kitchen Coconut Cream, it's gluten-free and unsweetened din, convenient if you're craving for dish with gata.

Strawberry Yogurt Cheesecake Bar
with Philadelphia Cream Cheese

Ingredients

Crust:
2 cups crushed graham crackers
1/2 cup melted salted butter

Filling:
5 (226g) Philadelphia Cream Cheese
1 cup granulated sugar
4 eggs
3 tbsp All purpose flour
1 tbsp vanilla extract
1 cup greek yogurt
1/2 cup strawberry jam

Topping:

Fresh Strawberries
4 tbsp greek yogurt
powdered sugar

Method:
1. combine crushed graham and melted butter
2. Evenly press crumb mixture on 9x13 baking pan lined with parchment paper. Bake crust in preheated oven 325F for 10 minutes. Remove pan from the oven and cool on a wire rack while you prepare the filling.
3 . beat the cream cheese, sugar, flour and vanilla extract until smooth. Add in eggs one at a time
4. Add greek yogurt and mix until fully incorporated
5. Pour cream cheese mixture over the crust
6. Bake 325f for 45 mins
7. Remove pan from the oven, allow to cool and chill for 6 hours or overnight
8. for the yogurt glaze, whisk greek yogurt and powdered sugar
9. serve with fresh strawberries.

Lechon Belly Roll with Leacco PH AF019 5L Air Fryer!

Brine Ingredients:

1 stalk lemon grass chopped
leeks (spring onion/green onion)
2 pieces of laurel bay leaves
1 tbsp whole peppercorn
5 cloves garlic crushed
2 tbsp sugar
1/4 cup fish sauce
5 cups water

1. simmer for 5 mins, turn off heat and allow to cool completely
2. 2kg pork belly roll (stuff with lemon grass and leeks)
3. submerge pork in brine and refrigerate for 12-24 hrs.
4. pre-heat Leacco Air fryer
5. basting mixture (soy sauce, milk and cooking oil)
6. set to 180c and cook Pork belly for 1 hour and 30 min (turn and baste every 30 mins)

Ingredients:

3 pcs beef shank (1350g)
1 L water (add more if needed)

salt (if needed)
extra butter for the pan

For the sauce:

1/4 cup all purpose flour
unsalted butter
2/3 cup full cream milk
1 1/2 - 2 cups broth (add more depending on desired consistency)
1 tbsp worcestershire sauce
ground black pepper

Sides:
Buttered Corn, Mushrooms and Green Beans
