Through the voices, dances, and presentations of the Yogad, Itawis, Gaddang, and Ybanag groups, the forum became a meaningful space where culture continues to be carried, shared, and strengthened by a new generation of young cultural leaders. 🌾✨

Pindang in Mangaldan, Pangasinan.

One of the most interesting parts of the pindang demonstration during MAY-KAN Leg 4 with DOT Region 1 was realizing how much patience and practical knowledge go into preparing the carabeef.

We watched as the tougher litid and hard portions were carefully removed first, while the softer cuts were selected for preparation. They shared that these same tender parts are also commonly used for the famous pigar-pigar, making every cut valuable and intentional.

What stayed with me most was the simplicity of the seasoning. The carabeef was seasoned well by Ma’am Veronica Junatay, or Nanay Veron, using methods they have long practiced through experience. They explained that garlic is intentionally avoided during the process because it can harden the meat. Small details like these revealed how traditional food knowledge is quietly preserved through generations.

As the rich aroma of the seasoned carabeef slowly filled the space, the demonstration became more than just food preparation. It felt like witnessing a tradition carefully protected by people who continue to carry it with pride and patience.
