FRIED RICE AND POTATOES
Ingredients:
2 cups cooked rice (preferably cold, day-old rice works best)
200g minced pork
2 medium potatoes, peeled and diced
2 eggs, lightly beaten
1 medium onion, finely chopped
2-3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon sesame oil
1 tablespoon vegetable oil (for frying)
Salt and pepper to taste
2 spring onions (green onions), sliced (for garnish)
1/2 teaspoon chili flakes (optional, if you like heat)
Instructions:
Prepare the Potatoes:
Heat a tablespoon of vegetable oil in a large skillet or wok over medium heat.
Add the sliced potatoes and fry them until golden and crispy on the outside, about 8-10 minutes. Stir occasionally to ensure they cook evenly.
Remove the potatoes from the pan and set them aside on a plate. Drain any excess oil.
Cook the Minced Pork:
In the same pan, add a little more oil if needed. Add the minced pork and cook, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes.
Season with a pinch of salt and pepper, and then set the pork aside with the potatoes.
Prepare the Vegetables:
In the same pan, add the chopped onion and garlic. Stir-fry for 1-2 minutes until fragrant and softened.
Scramble the Eggs:
Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.
Fry the Rice:
Add the cooked rice to the pan, breaking up any clumps. Stir well to combine everything evenly.
Add the soy sauce, oyster sauce (if using), and sesame oil. Stir-fry for 3-4 minutes, ensuring the rice gets coated with the sauce and is heated through.
Combine Everything:
Return the cooked potatoes and minced pork to the pan. Stir everything together gently to combine, making sure the potatoes don't break apart.
Taste and adjust seasoning with more salt, pepper, or soy sauce if necessary.
If you like it spicy, sprinkle in some chili flakes.
Garnish and Serve:
Remove from heat and garnish with sliced spring onions.
Serve hot, and enjoy your fried rice with minced pork and potatoes!
