🍤 Garlic Shrimp & Egg Stir-Fry with Broccoli and Glass Noodles
A light, savory stir-fry made with silky glass noodles (or shirataki noodles), fluffy scrambled eggs, tender shrimp, and broccoli in a garlic-infused sauce.
🛒 Ingredients:
Main:
8–10 large shrimp, peeled & deveined
2 eggs, beaten
1–2 cups broccoli florets (lightly steamed or blanched)
1 package glass noodles (or shirataki noodles), cooked & drained
1 tbsp oil (sesame or neutral)
Salt & black pepper to taste
Garlic Sauce:
1 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp fish sauce (optional for depth)
3–4 garlic cloves, minced
1 tsp sugar or honey
1/4 cup water or broth
1 tsp cornstarch + 1 tbsp water (optional, for thickening)
👩🍳 Instructions:
1. Prep Noodles & Broccoli:
Cook noodles according to package. Drain and set aside.
Lightly steam broccoli until tender-crisp and vibrant green.
2. Cook Eggs:
Heat 1/2 tbsp oil in a nonstick pan over medium heat.
Pour in beaten eggs and scramble gently until soft but set. Remove and set aside.
3. Cook Shrimp:
Add the rest of the oil to the pan. Add shrimp and sauté until just pink and opaque. Season lightly with salt and pepper. Remove and set aside.
4. Make Garlic Sauce:
In the same pan, sauté garlic until fragrant (about 30 seconds).
Stir in soy sauce, oyster sauce, fish sauce, sugar, and broth/water.
Optional: Add cornstarch slurry and simmer 1 minute until sauce thickens slightly.
5. Combine All:
Return shrimp, eggs, broccoli, and noodles to the pan.
Toss everything gently to coat with the garlic sauce.
Finish with a few cracks of black pepper and a drizzle of sesame oil if desired.
📝 Serving Tip:
Serve hot as-is or with a wedge of lime for brightness. Perfect for lunch or a quick, healthy dinner!
