Filipino-Style Pork Barbecue Recipe
Ingredients:
1 kg pork belly or shoulder, sliced into thin, bite-sized pieces
20-25 bamboo skewers, soaked in water for at least 30 minutes
1 cup soy sauce
1/2 cup banana ketchup
1/2 cup brown sugar
1/4 cup calamansi juice (or lemon juice)
1 head garlic, minced
1 tbsp ground black pepper
1/4 cup Sprite or 7-Up (optional for tenderizing)
1 tsp chili flakes (optional for spice)
1/2 cup cooking oil (for basting)
Extra banana ketchup and melted butter for basting

Procdeures
Prepare the marinade by mixing soy sauce, banana ketchup, brown sugar, calamansi juice, garlic, black pepper, and Sprite (if using) in a large bowl.
Add the pork to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
Thread 3-4 pieces of marinated pork onto each bamboo skewer, ensuring you don't overcrowd them.
Prepare the basting sauce by mixing equal parts banana ketchup and melted butter in a small bowl.
Preheat a grill or charcoal barbecue. Cook the skewers over medium heat, turning frequently to prevent burning. Baste with the banana ketchup mixture during grilling for added flavor and a glossy finish.
Serve the barbecue with rice, vinegar dipping sauce, or a side of atchara (pickled papaya).
