Perfect for summer, a cooked form of collagen.
At its core, gelatin is a protein derived from collagen. It’s typically obtained from the connective tissues, bones, and skin of animals (usually cows or pigs). When heated in water, the collagen fibers loosen; as it cools, they tangle back together, trapping liquid in a semi-solid mesh.
