👩🏻🍳 RECIPE ALERT! 👩🏻🍳
Past few months isa sa naging fave Netflix show ko yung Chef & My Fridge. Bale eto yung mga famous Korean chefs na mga nagjoin din sa Culinary Wars pero mas nauna itong show na ito for a decade na I think. So one episode, yung isang actor ay fave ang mushrooms so ginawa ito ng chef. Honestly hindi ko naisip na onga ano pwede pala, nasanay lang talaga ako na laging nasa ramyum ito or shabu-shabu. Pero dahil sa episode na yun, napatry ako and yesss madali lang gawin + Andre approved.
So I'm sharing the recipe I used, Korean-style siya for fritters, though meron ibang ways pero I opted for the most uncomplicated ingredients. You can always make your own touch of seasoned flour pero eto yung ginawa ko. Enjoy!
🥢 KOREAN-STYLE ENOKI FRITTERS 🥢
Ingredients:
1 pack (200 g) enoki mushrooms
Vegetable oil, for frying
Seasoned Flour Mix (Dry Mix)
- ½ cup all-purpose flour
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp white pepper (Korean-style flavor)
- ¼ tsp ginger powder
- Optional heat: ⅛ tsp gochugaru (for spicy ver.)
Egg Wash - 1 egg, beaten
Instructions:
1. Heat a pot of oil to 360–375°F (180–190°C).
2. Prep the Enoki - Cut off the base and divide into small clusters. Keep them fluffy, not squeezed tight.
3. Prepare Coating Stations
→ Bowl 1: seasoned flour mix
→ Bowl 2: beaten egg
4. Coat the Mushrooms
→ Lightly dredge enoki in the flour
→ Dip into the egg wash, shake off excess.
→ Press back into the seasoned flour
5. Fry
→ Carefully drop enoki clusters into hot oil.
→ Fry 1–2 minutes until golden, airy, and crispy.
For extra crisp:
→ Let rest 30–60 seconds
→ Flash fry again for 15–20 seconds
6. Drain
→ Place on a wire rack or paper towels.
→ No extra seasoning needed (but if you want more taste, you can toss it with salt while it's hot, parang similar sa fries)
