Filipino seafood dishes: Sinigang na Hipon, Inihaw na Pusit, and Kinilaw na Tanigue.

1. Sinigang na Hipon (Sour Shrimp Soup)
🦐 Ingredients:
* ½ kilo shrimp (cleaned, with shell and head intact)
* 1 medium onion (quartered)
* 2 medium tomatoes (quartered)
* 1 radish (sliced)
* 1 cup string beans (sitaw)
* 1 cup water spinach (kangkong)
* 1 long green chili (optional)
* 1 pack tamarind soup base (or ½ cup fresh tamarind juice)
* 1 liter water
* Salt or fish sauce (patis) to taste
🍲 Instructions:
1. Boil water in a pot. Add onions and tomatoes; cook for 3-5 minutes until softened.
2. Add radish and string beans. Simmer for 5 minutes.
3. Add shrimp and green chili. Cook until shrimp turns pink.
4. Pour in the tamarind mix or fresh tamarind juice. Simmer for another 3 minutes.
5. Season with salt or patis to taste.
6. Add kangkong leaves last. Turn off the heat.
7. Serve hot with rice.

2. Inihaw na Pusit (Grilled Squid)
🦑 Ingredients:
* 2–3 medium-sized squid (cleaned, with head and tentacles)
* 2 tablespoons soy sauce
* 1 tablespoon calamansi or lemon juice
* 1 small onion (chopped)
* 1 small tomato (chopped)
* 2 cloves garlic (minced)
* Salt and pepper to taste
* Cooking oil for brushing
🔥 Instructions:
1. In a bowl, mix soy sauce, calamansi, garlic, salt, and pepper. Marinate squid for 15–30 minutes.
2. In a separate bowl, mix onion and tomato. Use this as stuffing for the squid.
3. Stuff squid with tomato-onion mixture and secure with toothpicks.
4. Preheat grill or charcoal fire. Brush squid with oil to prevent sticking.
5. Grill squid for 3–5 minutes on each side or until cooked (do not overcook to avoid rubbery texture).
6. Serve with spiced vinegar dipping sauce.

3. Kinilaw na Tanigue (Filipino Ceviche)
🐟 Ingredients:
* ½ kilo tanigue (Spanish mackerel), cut into small cubes
* ½ cup vinegar or calamansi juice (or both)
* 1 thumb-sized piece of ginger (minced)
* 1 small red onion (chopped)
* 1 cucumber (optional, thinly sliced)
* 1 red chili (sliced, optional)
* 2 tablespoons coconut milk (optional)
* Salt and pepper to taste
🧊 Instructions:
1. Rinse the fish cubes in vinegar briefly, then drain.
2. In a bowl, mix fish with fresh vinegar or calamansi juice.
3. Add ginger, onion, chili, and cucumber (if using).
4. Season with salt and pepper. Mix well.
5. Optional: Add coconut milk for a creamier flavor.
6. Chill before serving. Best eaten fresh.
