Recipe👩‍🍳Tinolang Native na Manok Ingredients👉
1 kilo native chicken, cut into preferred serving pieces
2 pieces green papaya or chayote(sayote), cut into small pieces
1 cup malunggay leaves or chili leaves
5 stalks lemongrass(tanglad), knotted and crushed
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
1 litre of water
4 tablespoons vegetable oil
fish sauce or salt to taste

INSTRUCTIONS👉
1. In a sauce pan, heat oil over medium heat then saute ginger, garlic and onion and cook until limp and aromatic.
2. Add chicken then continue sauteing for about 5 to 7 minutes until the color chicken turn to light brown and juices run clear. Add fish sauce and cook, stirring occasionally, for about 1 to 2 minutes.
3. Add water and lemongrass and bring to a boil, then cover and simmer in a low heat for an hour or until chicken is tender. Add more water if necessary.
4. Add papaya or chayote then continue simmering for another 5 minutes until tender yet crisp.
5. Season with salt and pepper to taste then add malunggay leaves or chili leaves and simmer for another minute.
6. Remove from heat then transfer to a serving dish and serve hot. Enjoy!

Chicken Sotanghon Soup Recipe🧑‍🍳🍜
Ingredients:
1 tablespoon canola oil
1 onion, peeled and sliced thinly
4 cloves garlic, peeled and minced
1 thumb-size ginger, peeled and julienned
1 pound chicken wings, tips removed and cut into 2-inch pieces
1 cup Chinese celery (kinchay), chopped
2 tablespoons fish sauce
7 cups chicken broth
1 teaspoon atchuete powder
1 large carrot, peeled and julienned
salt and pepper to taste
4 ounces (about 2 coils) sotanghon
½ head napa cabbage, shredded
3 hardboiled eggs, peeled and halved
fried garlic bits
green onions, chopped

For The Fried Garlic Bits
½ cup oil
1 head garlic, peeled and minced

Instructions:
1. In a large pot over medium heat, heat oil. Add onions, garlic, and ginger and cook until softened.

2. Add chicken and cook, stirring regularly, until lightly browned and juices run clear.

3. Add celery and cook, stirring regularly, for about 1 to 2 minutes or until softened.

4 Add fish sauce and cook for about 1 to 2 minutes.

5. Add chicken broth and bring to a boil, skimming any scum that floats on top. Lower heat, cover, and continue to cook until chicken is cooked through.
In a bowl, combine about ½ cup of the hot broth and atsuete powder. Stir until atsuete is dissolved. Add atsuete water to pot.

6. Add carrots and cook for about 1 to 2 minutes or until half-done. Season with salt and pepper to taste.

7.Add sotanghon noodles and push down into broth to soften, stirring gently to separate.

8. When noodles have slightly softened, add cabbage and cook for another 2 to 3 minutes or until noodles are cooked and vegetables are tender yet crisp.

9. Ladle soup into bowls and top with boiled eggs, fried garlic bits and green onions. Serve hot.

For The Fried Garlic Bits
In a small pan over low heat, heat oil. Add garlic and cook, stirring occasionally, for about 10 to 15 minutes or until golden brown.
With a slotted spoon, remove from pan and drain on paper towels. Garlic will crisp as it cools.

CHICKEN SHAWARMA RECIPE🌯🧑‍🍳
Ingredients:
For the Chicken Marinade:
1 kg boneless chicken thighs or breasts

4 tbsp plain yogurt

3 tbsp olive oil ( can use regular oil)

4 cloves garlic (minced)

Juice of 1 lemon

1 tsp ground cumin

1 tsp ground coriander

1 tsp ground paprika

1 tsp turmeric

1 tsp ground cinnamon

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

For the Garlic Sauce (Toum):
1 cup garlic cloves (peeled)

1 tsp salt

1 1/2 cups vegetable oil

1/4 cup lemon juice

2–3 tbsp cold water (optional)

For Serving:
Pita or flatbread

Sliced cucumbers, tomatoes, onions, lettuce

Pickles (optional)

Instructions:
1. Marinate the Chicken:
Combine yogurt, olive oil, garlic, lemon juice, and spices in a bowl.

Add the chicken and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

2. Cook the Chicken:
Grill or pan-fry on medium-high heat until charred and fully cooked (about 5–7 minutes per side).

Let it rest for a few minutes, then slice thinly.

3. Make Garlic Sauce (Toum):
In a food processor, pulse garlic and salt until finely minced.

Slowly drizzle in oil while alternating with lemon juice to emulsify (like making mayo).

Add cold water if it gets too thick.

4. Assemble Shawarma Wraps:
Warm the pita bread.

Spread garlic sauce, layer sliced chicken, add veggies and pickles.

Roll up and serve hot.

Creamy Chicken Macaroni Salad Recipe🧑‍🍳

INGREDIENTS:
1/2 kilo elbow macaroni
1/2 kilo chicken breast
1 large carrot
1/2 cup pineapple tidbits
2 cups mayonnaise
1 cup all purpose cream
1/2 cup cheese (diced)
1 medium white onion
1 small pack raisins
1 tablespoon pickles
2 tablespoons celery stalks (minced)
3 tablespoon condensed milk (or asukal) (optional)
Salt and pepper to taste
More grated cheese

PROCEDURE:
1. Ilaga ang chicken breast sa tubig na may kaunting asin. Pag naluto na, i-shred ito sa maliliit na piraso. Iluto na rin ang elbow macaroni at carrot at palamigin.
2. Pagsama-samahin ang mga sangkap: macaroni, chicken breast, cheese, carrot, pickles, raisins, white onion, celery at pineapple tidbits. Mas maganda haluin sa malaking lalagyan para mas mahalong mabuti.
3. Then, saka ilagay ang mayonnaise at all purpose cream. Pwede ang krema asada, kremquezo or kremdensada pero tantyahin dahil matamis ito.. Haluin mabuti then timplahan ng salt and pepper. Tikman. Maglagay ng condensed milk ayon sa gusto nio to balance the taste. (kung kremdensada ang ginamit ninyo, pwede wala nang condensed milk.
4. Lagyan ng grated cheese para lalong lumasa ang cheesey sarap. Haluin mabuti.
5. Ilagay sa mga lalagyan at palamigin ng kahit isang oras bago kainin para lumasa ng husto ang mga sangkap.

Spicy Pineapple Beef Tacos🌶🍍🌮👩‍🍳
Ingredients:

For the Beef:

1 lb (450g) ground beef or thinly sliced beef

1 tbsp olive oil

2 cloves garlic, minced

1 tsp chili powder

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional, for extra heat)

Salt and black pepper, to taste

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 small jalapeño, minced (optional)

Juice of 1 lime

2 tbsp fresh cilantro, chopped

Salt, to taste

For the Tacos:

8 small corn or flour tortillas

Optional toppings: shredded lettuce, avocado slices, sour cream, cheese

Instructions:

Prepare Pineapple Salsa: In a bowl, combine pineapple, red bell pepper, red onion, jalapeño (if using), lime juice, cilantro, and a pinch of salt. Mix and set aside.

Cook Beef:

Heat olive oil in a skillet over medium-high heat.

Add garlic and sauté 30 seconds until fragrant.

Add beef, chili powder, smoked paprika, cayenne, salt, and pepper. Cook 5–7 minutes until browned and cooked through.

Warm Tortillas: Heat tortillas in a skillet or microwave until soft and pliable.

Assemble Tacos: Fill each tortilla with spiced beef and top with pineapple salsa and any optional toppings.

4 Cups Packed Greens of choice
