(1) Matcha Brownies
INGREDIENTS
* ½ cup white sugar 100 grams
* ½ cup brown sugar 100 grams (light or dark sugar works)
* 3 large egg room temperature
* ½ cup unsalted butter 113 grams
* ¾ cup all-purpose flour 94 grams
* 2 tbsp ceremonial grade matcha powder 10 grams
* ½ cup white chocolate
* 1 tsp vanilla extract
* ½ tsp salt
* ¼ tsp baking powder
INSTRUCTIONS
1. Preheat oven. Preheat oven to 350°F (180°C). Line an 9-inch square baking dish with parchment paper.
2. Brown butter. Take a small saucepan and brown the butter on medium heat until all the butter is melted. Turn down to low heat until little brown bits show up on the bottom of the saucepan.
3. Melt white chocolate. Put the white chocolate in a medium bowl and pour the browned butter over. Stir until all the white chocolate melts. Set aside.
4. Mix the wet ingredients. Mix the sugar and room-temperature eggs in a stand mixer or hand mixer for roughly 5 minutes. Once you achieve a nice light creamy colored mixture add the vanilla extract and mix for 3 minutes. Add the white chocolate and browned butter to the wet ingredients. Mix until well incorporated.
5. Add dry ingredients to wet. Sift the all-purpose flour and matcha powder. Add the all-purpose flour and matcha powder, baking powder and salt to the wet ingredients and use a spatula to gently fold the flour into the mixture.
6. Pour into baking pan. Pour the batter into the prepared 9-inch X 9-Inch baking pan.
7. Bake. Bake for 20-21 minutes. Remove from oven and let it cool for 15-20 minutes before removing from the baking pan and cutting them. Enjoy with a glass of milk!
(2) Chocolate Brownies
INGREDIENTS
* ½ cup (1 stick / 115g) unsalted butter
* ½ cup (100g) dark brown sugar, packed
* ½ cup (100g) granulated sugar
* 2 large eggs, at room temperature
* 1 teaspoon vanilla extract
* ½ cup (60g) all-purpose flour
* ½ cup (40g) unsweetened cocoa powder
* ¼ teaspoon salt
* ¼ teaspoon baking soda
* ½ cup (4 ounces) semisweet chocolate chips or chocolate chunks (optional)
INSTRUCTIONS
1. Preheat oven to 350°F. Line the bottom and sides of an 8x8 inch baking pan with parchment paper leaving some overhanging parchment paper to make it easier to pull brownies out of the pan.
2. Place butter in a large bowl and heat in your microwave or on a double broiler until melted. You can also melt the butter in a pot on your stove top. Add your brown sugar and granulated sugar to the butter while it's still hot. Whisk to incorporate.
3. Add your room temperature eggs and vanilla extract to the butter / sugar mix. Whisk until everything is incorporated.
4. Add flour, cocoa powder, salt, and baking soda to the wet ingredients along with any add-ins you'd like (I added chocolate chips). Fold the ingredients together until everything is fully incorporated and you no longer see any dry ingredients.
5. Pour your batter into your prepared baking dish. Place your baking dish into the center of a preheated 350°F oven. Bake for 25 to 30 minutes, or until a skewer inserted into the center comes out clean of batter, but with a few wet crumbs.
6. Allow the brownie to cool in the baking dish for 10 to 15 minutes. Transfer to a wire rack to finish cooling. Slice your brownies. Serve plain or top with some ice cream, melted chocolate, chopped nuts, or whatever else you like!
(3) Caramel Brownies
INGREDIENTS
* 1 cup (2 sticks) unsalted butter, melted
* 2 cups granulated sugar
* 1 teaspoon vanilla extract
* 4 large eggs
* 1 cup all-purpose flour
* 1/2 cup unsweetened cocoa powder
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 1 cup caramel sauce
INSTRUCTIONS
1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
2. In a large bowl, combine the melted butter and sugar. Stir in the vanilla extract and eggs one at a time.
3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
5. Pour half of the brownie batter into the prepared baking pan.
6. Drizzle the caramel sauce evenly over the batter.
7. Carefully pour the remaining brownie batter over the caramel layer, spreading it gently to cover.
8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
9. Let the brownies cool completely in the pan before cutting into squares.
(4) Fudgy Red Velvet Brownies
INGREDIENTS
* 1 cup (2 sticks) unsalted butter, melted
* 1 1/2 cups granulated sugar
* 1⁄4 cup packed light brown sugar
* 2 tablespoons unsweetened cocoa powder
* 1 teaspoon vanilla extract
* 1 tablespoon red food coloring
* 1 1/4 cups all-purpose flour
* 1⁄4 teaspoon salt
* 3 large eggs
* 1⁄2 cup semi-sweet chocolate chips (optional)
* 1 teaspoon white vinegar
INSTRUCTIONS
1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper for easy removal.
2. In a large mixing bowl, combine the melted butter, granulated sugar, and light brown sugar. Stir until well blended.
3. Mix in the cocoa powder, vanilla extract, and red food coloring until thoroughly combined and the mixture is a uniform red color.
4. Add the flour and salt to the wet mixture. Stir gently until just combined, being careful not to overmix, as this can result in tough brownies.
5. Beat in the eggs one at a time, mixing well after each addition until the batter is smooth.
6. If desired, fold in the semi-sweet chocolate chips for added chocolate flavor.
7. Lastly, add the white vinegar and give the batter one final mix. This will enhance the red color.
8. Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs. Do not overbake.
10. Allow the brownies to cool completely in the pan before cutting into squares.
