PANCIT PALABOK RECIPE 🍜
**Ingredients:**
- 250g rice noodles (thick or thin, according to preference)
- 200g shrimp, peeled and deveined
- 200g ground pork
- 4 cups shrimp or chicken broth
- 1/2 cup fish sauce (patis)
- 2 tablespoons annatto powder (achuete)
- 1/4 cup flour
- 1/2 cup chicharon (pork cracklings), crushed
- 4 boiled eggs, sliced
- 2 cups cabbage, finely chopped
- 1 cup green onions, chopped
- 3 cloves garlic, minced
- 1/2 cup tinapa (smoked fish), flaked
- 2 tablespoons cooking oil
- Calamansi or lemon slices (for garnish)
- Salt and pepper to taste
**For the sauce:**
1. Heat oil in a pan. Saute garlic until golden brown.
2. Add annatto powder to the broth. Mix until well combined.
3. Slowly add the fish sauce and flour. Stir continuously to avoid lumps. Cook until the sauce thickens. Set aside.
**For the toppings:**
1. Cook the shrimp. Set aside.
2. In the same pan, sauté the ground pork until browned. Set aside.
3. Sauté the tinapa (smoked fish) until fragrant. Set aside.
**For assembling:**
1. Boil the rice noodles according to package instructions. Drain and set aside.
2. Lay the cooked noodles on a serving plate.
3. Pour the sauce over the noodles.
4. Top with cooked shrimp, ground pork, tinapa, chopped cabbage, and green onions.
5. Garnish with crushed chicharon and boiled egg slices.
6. Add some slices of pork chops on the top.
7. Serve with calamansi or lemon slices on the side for added flavor.
