🍥 SOFT FLUFFY CINNAMON ROLLS

Yield: Approximately 10–12 large rolls, depending on size
🥖 DOUGH
500 grams Pilmico Bread Flour
220 ml lukewarm milk
½ cup white sugar
2 medium eggs, room temperature
100 grams butter, room temperature
1 teaspoon salt
1 tablespoon instant dry yeast (Eagle Yeast)
🍂 CINNAMON FILLING
Âľ cup brown sugar
2–4 tablespoons cinnamon powder
100 grams butter, room temperature
đź§€ CREAM CHEESE TOPPING
125 grams cream cheese, room temperature (Philadelphia)
100 grams butter, room temperature
1 cup icing sugar
1 teaspoon vanilla extract (Bakersfield)
4–6 tablespoons cream, adjust according to desired consistency
👨‍🍳 PROCEDURE
Prepare the dough:
Combine the bread flour, sugar, yeast and salt in a mixing bowl. Add the lukewarm milk and eggs. Mix until a dough forms.
Add the softened butter gradually and knead until the dough becomes smooth, soft and elastic. Avoid adding too much extra flour—the dough should remain soft.
Cover and let the dough rise in a warm place for about 1 hour, or until doubled in size.
Prepare the filling:
Mix the brown sugar and cinnamon powder. Set aside.
Shape the rolls:
Punch down the risen dough and roll it into a large rectangle. Spread the softened butter evenly over the surface. Sprinkle generously with the cinnamon-brown sugar mixture.
Roll the dough tightly into a log, starting from the long side. Cut into equal pieces.
Arrange the rolls in a greased baking pan, leaving a little space between each piece. Cover and let them proof again for about 30–45 minutes, or until noticeably puffy.
Bake:
Preheat the oven to 170–180°C. Bake for approximately 20–25 minutes, or until lightly golden and fully baked.
Do not overbake to keep the rolls soft and fluffy.
Prepare the cream cheese topping:
Beat the cream cheese and butter until smooth. Add the icing sugar gradually, then mix in the vanilla. Add the cream little by little until you reach a smooth, creamy spreading consistency.
Spread the cream cheese topping over the warm—not piping hot—cinnamon rolls.

For extra-soft cinnamon rolls, don't over-flour the dough and don't overbake. Keep them properly covered after cooling to maintain their softness.
