1. In a large mixing bowl, combine the ground pork, chopped carrots, bell peppers, onion, sweet pickle relish, raisins, grated cheese, tomato sauce, beaten eggs, bread crumbs, salt, pepper, green peas, melted butter, sugar, and minced fresh pineapple. Mix well until all ingredients are evenly distributed.
2. Preheat your oven to 350°F (175°C).
3. Prepare a piece of aluminum foil or banana leaves and place a portion of the pork mixture onto the center. Shape the mixture into a log shape, about 8-10 inches long, using the foil or banana leaves to help mold and roll the embutido tightly.
4. Roll the embutido tightly in the foil or banana leaves, twisting the ends to seal.
5. Repeat the process with the remaining pork mixture, forming additional embutido logs.
6. Place the wrapped embutido on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until cooked through.
7. Once cooked, remove the embutido from the oven and allow them to cool slightly before unwrapping.
8. Slice the embutido into serving portions and serve warm or at room temperature.
