Crispy Garlic Cod Bites

Ingredients:
1 lb (450 g) fresh cod fillets, cut into bite-sized pieces
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
Oil for frying (vegetable or canola)
For the Lemon Pepper Dip:
1/2 cup mayonnaise
2 tbsp fresh lemon juice
1 tsp lemon zest
1/2 tsp black pepper
1 garlic clove, minced
Pinch of salt

Directions:
Pat the cod pieces dry with paper towels and season lightly with salt and pepper.
In a shallow bowl, mix flour, garlic powder, salt, and black pepper.
In another bowl, beat the eggs. In a third bowl, combine panko breadcrumbs and grated Parmesan cheese.
Dredge each piece of cod first in flour, then dip in egg, and finally coat with the panko-Parmesan mixture.
Heat oil in a deep skillet over medium-high heat. Once hot, fry the cod bites in batches for 2–3 minutes per side, or until golden and crispy.
Remove and drain on paper towels to remove excess oil.
For the dip: In a small bowl, whisk together mayonnaise, lemon juice, lemon zest, garlic, black pepper, and salt until smooth.
Serve the crispy cod bites hot with the tangy lemon pepper dip on the side

For the shrimp

1 pound large shrimp, peeled and deveined

1 tablespoon butter

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper, to taste

For the fried rice

3 cups cooked and chilled white rice

1 tablespoon oil

1 egg, beaten

1/2 cup peas

1/2 cup diced carrots

1/4 cup corn

2 tablespoons soy sauce

1 tablespoon butter

1 tablespoon chopped green onion or parsley

Mutton Chilli 🍖🫑

Ingredients – Marination:
400g Boneless Mutton
1 tsp Salt
1 tsp Black Pepper Powder
1/2 tbsp Ginger Garlic Paste
Juice of Half Lemon
1 tsp Dark Soya Sauce
1/4 cup Water

Method:

1. Cut boneless mutton into small bite-sized pieces and marinate with the above ingredients for 30 minutes.

2. Transfer to a pressure cooker, add 1/4 cup water, and cook for 3–4 whistles until tender.

Ingredients – Mutton Chilli:
2 tbsp Oil
1.5 inch Ginger (julienned)
3 Big Garlic Cloves (julienned)
3 Green Chillies (slit)
1 Capsicum (sliced)
1 tsp Sugar

Method:

1. Heat oil in a pan.

2. Add julienned ginger and sauté for a few seconds.

3. Add garlic and sauté briefly.

4. Add green chillies and sauté for a few seconds.

5. Add capsicum and sauté lightly for crunch.

6. Add cooked mutton pieces. Mix well, cover, and cook for 5 minutes.

7. Add the reserved mutton stock. Bring to a boil.
