π§π Grilled Cheesy Sloppy Joes
Ingredients (makes 4 sandwiches)
1 lb (450g) ground beef (or ground turkey/chicken if you prefer)
1 small onion, finely diced
1 small green bell pepper, finely diced (optional)
2 cloves garlic, minced
1 cup tomato sauce (or ketchup for extra sweetness)
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp chili powder (optional, for a little kick)
Salt & pepper, to taste
8 slices of bread (thick-cut white, sourdough, or Texas toast works best)
8 slices of cheese (American, cheddar, provolone, or a mix)
Butter (softened, for grilling)
Directions
Cook the Sloppy Joe filling
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add onion, pepper, and garlic. Cook until soft (3β4 minutes).
Stir in tomato sauce, paste, Worcestershire, paprika, and chili powder. Season with salt & pepper.
Simmer for 5β7 minutes until thickened. Remove from heat.
Assemble the sandwiches
Butter one side of each slice of bread.
Place 1 slice (butter-side down) in a skillet over medium heat.
Add 1 slice of cheese, a scoop of sloppy joe filling, another slice of cheese, then top with a second slice of bread (butter-side up).
Grill to melty perfection
Cook 2β3 minutes per side until golden brown and the cheese is melted.
Repeat with remaining sandwiches.
Serve hot & cheesy π₯π§
Slice in half and enjoy that gooey, cheesy, savory bite.

Swap in brioche buns instead of bread for a thicker sandwich.
