Loaded Cheesy Bacon Fries

Ingredients:

6 slices bacon, cooked and crumbled
1/2 cup sour cream
2 tablespoons butter, melted
1Β½ lbs frozen or fresh French fries
2 tablespoons olive oil
Salt, to taste
1Β½ cups shredded cheddar cheese
1 cup shredded mozzarella cheese
2 green onions, finely sliced
1/4 teaspoon smoked paprika
Black pepper, to taste

Directions:

Preheat oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.

Toss fries with olive oil and salt, spread evenly on the baking sheet, and bake for 30–35 minutes, flipping halfway, until golden and crispy.

Remove fries from oven and brush lightly with melted butter.

Sprinkle cheddar and mozzarella evenly over the fries, followed by crumbled bacon and smoked paprika.

Return to oven and bake for 5–7 minutes, or until cheese is fully melted and bubbly.

Remove from oven, drizzle with sour cream, and finish with green onions and black pepper.

250 g bowtie pasta (farfalle)
300 g ground beef
2 tbsp cooking oil or butter
1 small onion, chopped
3 cloves garlic, minced
1 cup all-purpose cream or heavy cream
Β½ cup milk
Β½ cup grated parmesan or quick-melt cheese
1 tbsp tomato paste (optional, for color & flavor)
Salt & pepper to taste
Italian seasoning or dried herbs

Ingredients:

1 whole lamb leg (5–6 lbs), bone-in
2 tablespoons olive oil
1 tablespoon coarse sea salt
2 teaspoons black pepper
4 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
Zest of 1 orange
Zest of 1 lemon
1 cup fresh or frozen cranberries
1/2 cup pure maple syrup
1/4 cup orange juice, freshly squeezed
2 tablespoons balsamic vinegar
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 cup lamb or chicken stock

Directions:

Preheat oven to 300Β°F (150Β°C). Pat the lamb dry with paper towels and place it in a large roasting pan.

Rub the lamb all over with olive oil, salt, black pepper, garlic, rosemary, orange zest, and lemon zest. Massage well to coat evenly.

In a saucepan over medium heat, combine cranberries, maple syrup, orange juice, balsamic vinegar, cinnamon, and cloves. Simmer for 10–12 minutes until cranberries burst and the glaze thickens slightly.

Pour half of the cranberry glaze over the lamb and add stock to the bottom of the roasting pan.

Cover tightly with foil and roast for 3 to 3Β½ hours, basting every hour with pan juices.

Remove foil, increase oven temperature to 400Β°F (205Β°C), brush with remaining glaze, and roast uncovered for 20–25 minutes until beautifully caramelized.

1 cup broccoli florets

1 cup carrots, sliced into rounds

1/2 onion, sliced

2 tbsp olive oil

2 cloves garlic, minced

Sauce:

3 tbsp soy sauce (or low-sodium)

1 tbsp oyster sauce (optional but clutch)

1 tbsp water or chicken broth

1/2 tsp black pepper

1/2 tsp paprika or seasoning blend of choice

Slow-Roasted Greek Lamb with Lemon, Garlic & Herbs

Ingredients:

2–2.5 kg (4–5 lb) bone-in leg of lamb

6–8 garlic cloves, sliced or crushed

Juice and zest of 2 lemons

4 tablespoons olive oil

2 teaspoons salt

1 teaspoon black pepper

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh thyme

1 cup (240 ml) dry white wine or chicken broth

Optional: peeled potatoes

Directions:

In a small bowl, mix olive oil, lemon juice and zest, garlic, rosemary, thyme, salt, and pepper.

Pat the lamb dry and make small slits all over the meat. Rub the marinade thoroughly, pushing garlic and herbs into the slits.

Optional: Let the lamb marinate for 1–2 hours at room temperature or overnight in the fridge.

Preheat the oven to 160Β°C (325Β°F). Place lamb in a deep roasting pan and pour the wine or broth around the meat. Cover tightly with foil or a lid.

Roast for 3.5–4 hours. Add potatoes after the first hour if using. Baste occasionally.

2 tablespoons olive oil

1 tablespoon honey

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon dried mixed herbs (or thyme/oregano/rosemary)

1/2 teaspoon paprika

1/2 teaspoon garlic powder

Salt and black pepper, to taste

Baby Potatoes

600 g baby potatoes, halved

1–2 tablespoons olive oil or melted butter

1 small onion, finely chopped

1 teaspoon dried herbs

Salt and black pepper, to taste

Directions

In a bowl, whisk olive oil, honey, garlic, lemon juice, dried herbs, paprika, garlic powder, salt, and pepper. Rub this marinade all over the chicken thighs and under the skin; marinate at least 30 minutes.

Toss the halved baby potatoes with olive oil or butter, chopped onion, dried herbs, salt, and pepper until well coated.

Place the chicken thighs skin‑side up on a baking tray and scatter the seasoned potatoes around them in a single layer.
