💠 PALITAW SA LATIK RECIPE 💠

Para sa latik:
1 cup coconut cream (kakang gata)
Para sa palitaw:
2 cup glutinous rice flour (malagkit powder)
3/4 cup water

Para sa latik sauce:
2 cups thin coconut milk
3/4 cup brown sugar
1/2 teaspoon salt
1/2 cup hinog na langka (optional)
1/2 teaspoon vanilla (optional) o dahon ng pandan
Sesame seeds (optional)

PROCEDURE:
PARA SA LATIK:
Lutuin ang coconut cream sa medium heat hanggang sa magbuo-buo. Lutuin ng tuloy tuloy at haluin hanggang sa lumabas ang mantika nito at maging brown yung latik. Salain ang nabuong latik at itabi.

PARA SA PALITAW:
Pagsamahin ang glutinous rice flour at water. Masahin hanggang sa maging sticky at smooth (hindi basa pero di rin naman dry, sakto lang para mahawakan) Kumuha ng dough at iporma na pabilog, saka palaparin para makabuo ng palitaw. Gawin ito sa lahat ng mixture. Then, magpakulo ng tubig. Ihulog ang mga napormang dough. Kapag lumitaw na ito (kaya nga palitaw) ibig sabihin ay luto na ito. Alisin na sa tubig at itabi muna.

PARA NAMAN SA LATIK SAUCE:
Pagsamahin ang coconut milk, salt at sugar. Lutuin sa medium heat at hayaang kumulo. Pag kumukulo na, ilagay na ang mga nalutong palitaw at latik. Pwede rin maglagay ng hinog na langka at dahon ng pandan. Lutuin ito hanggang sa lumapot ang sauce.

MASI DE CEBU

Ingredients
▪︎2 cups glutinous rice flour
▪︎1 cup water
▪︎1/4 cup muscovado sugar or brown sugar
▪︎1/4 cup peanut crushed
▪︎Water for boiling

INSTRUCTIONS:
1. In a bowl, combine crushed peanut and muscovado sugar, set aside.
2. In a bowl, combine the glutinous rice flour and water. Gradually add water. Mix the dough until it forms.
3. Scoop 1-2 tablespoon of the dough and roll into a ball. Flatten the ball and put add 1 teaspoon of the peanut mixture into the dough.
4. Gently fold and seal the edges of the dough. Repeat the each step with the remaining ingredients.
5. In a pot over medium heat, bring about 4 to 5 inches deep of water to a boil. Add balls and cook for about 2 to 3 minutes or until they float to the top. Do not overcrowd the pot, cook in batches as needed.
6. Remove rice balls from the pot using a slotted spoon, drain excess liquid.
7. Roll balls with the remaining peanut mixture, pressing down peanuts to fully coat. Serve immediately.

Ginisang Sayote with Ground Pork

Ingredients:
2 - 3 pieces small chayote (peeled, seed removed and sliced)
200 grams ground pork
3 cloves garlic (chopped)
1 piece red onion (chopped)
1 piece tomato (chopped)
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup water
seasoning granules, optional (any brand)
1/2 tsp malunggay powder (optional)

1. In a pan, heat cooking oil over medium heat. Saute the garlic, onions and tomatoes for 2 mins.
2. Add the ground pork and salt. Cook for 2 minutes until tender.
3. Add water and cover and simmer for 8 to 10 minutes.
4. Add the sliced sayote and mix. Cover and cook for 3 minutes, or until the sayote is tender.
5. Season with salt and pepper to taste, then stir. You may add seasoning granules to taste (optional).
6. Adjust according to your taste. Cook until done. Transfer to a serving bowl and serve hot.
