🥗 Veggie Power Bowl with Soft-Boiled Eggs
Ingredients:
2 eggs
½ avocado, sliced
½ cucumber, sliced
½ cup steamed broccoli
½ cup sautéed mushrooms
1 tbsp pumpkin seeds (or sunflower seeds)
1 tsp olive oil
Salt & black pepper to taste
Optional: a drizzle of lemon juice or balsamic glaze

Instructions:
1. Boil the eggs:
Place eggs in boiling water for 6½–7 minutes for soft centers. Cool in ice water, then peel and cut in half.
2. Prepare veggies:
Steam broccoli until bright green and tender.
Sauté mushrooms with a touch of olive oil and salt until golden.
Slice avocado and cucumber.
3. Assemble:
Arrange all ingredients in a bowl — starting with veggies, then top with eggs.
4. Finish:
Sprinkle with salt, pepper, and seeds. Drizzle a bit of olive oil or lemon juice for extra flavor.
