This research investigates whether arrowroot flour (Maranta arundinacea L.), a locally-grown alternative, could help break the Philippines' dependency on imported wheat while still delivering that perfect morning pandesal experience we crave. By kneading traditional baking methods with innovative local ingredients, researchers put various flour blends to the ultimate test: the Filipino palate.
