This Cheese Kababayan or Kabayan is soft, golden, and hiding a melty surprise inside!So easy, even first-time bakers can nail it.

Cheese Kababayan or Kabayan 🍞🧁
Dry Ingredients:
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Wet Ingredients:
1/3 cup sugar
1 large egg
1/2 cup Evaporated milk
1/4 cup Unsalted Butter, melted
1/2 tsp vanilla extract
2–3 drops yellow food coloring (optional)
For the Cheese Filling:
4 tsp Emborg Shredded Mozzarella
2 tsp Shredded Cheddar�
Optional for Finishing:
Extra melted butter for brushing tops after baking
Instructions:
1. Prepare the cheese filling:
Press together 2/3 tsp Emborg shredded Mozarella and 1/3 tsp shredded cheddar into a compact cheese ball. Make 6 pieces for 6 muffins. Chill in the fridge.
2. Preheat to 180°C (356°F). Let the oven heat fully for at least 10 minutes to ensure a good dome. Lightly grease your muffin tin.
3. Prepare the Batter:
* Sift together the flour, baking powder, baking soda, and salt.
* In another bowl, whisk the egg and sugar until slightly frothy.
* Add milk, melted butter, vanilla, and yellow food color. Mix well.
* Combine wet and dry mixtures. Stir until just combined. Batter should be thick but smooth—do not overmix.
4. Assemble the Kababayan:
* Spoon 1 tablespoon of batter into each muffin cup (about 1/3 full).
* Place 1 tsp cold cheese ball in the center.
* Add another 2 tablespoons of batter on top to cover the cheese, filling up to 2/3 full only.
* Let sit for 3–5 minutes before baking to help with dome formation.
5. Bake for 15-18 minutes or until lightly golden and a toothpick inserted beside the center comes out clean.
6. Let cool in the tin for 3–5 minutes, then remove and optionally brush tops with melted butter.Serve warm for the best cheese pull.
