Burong Kanin with Shrimp

Ingredients:
• ½ kg shrimp, washed and peeled (reserve heads)
• 2 cups cooked rice
• 2 cups water
• ¼ cup coconut oil
• 1 thumb-size ginger, grated
• 8 cloves garlic, minced
• 1 medium onion, minced
• 1 cup white vinegar
• Fish sauce (patis), to taste
• Salt and pepper, to taste
• Siling labuyo (optional)



Instructions:
1. Make the shrimp-rice paste:
• In a food processor, combine peeled shrimp and cooked rice.
• Blend until smooth and paste-like.
• Add 2 cups water and mix well. Set aside.
2. Sauté the aromatics:
• In a pan, heat coconut oil over medium flame.
• Add ginger, garlic, and onion.
• Sauté until fragrant and golden brown.
3. Cook the mixture:
• Pour in the shrimp-rice paste.
• Simmer gently.
• Halfway through cooking, add the reserved shrimp heads.
• Season with patis. Continue simmering until water reduces and oil starts to separate.
4. Add vinegar:
• Stir in white vinegar. Do not stir for the first few minutes to cook off the acidity.
• Season with salt and pepper.
• Simmer again until sauce is thickened and oil renders out.
5. Optional spice:
• Add siling labuyo for a spicy kick.
6. Serve:
• Transfer to a clean jar or serve freshly cooked.
• Perfect as a side dish with fried or grilled meats and fish.

Less than 30 minute meal | Pad Kra Pao ( Thai Basil Beef Stir-Fry with Fried Egg )

Ingredients:
• 500g ground beef
• 8 cloves garlic, minced
• 1 onion, minced
• 4 tbsp soy sauce
• 4 tbsp oyster sauce
• Fish sauce, to taste
• ½ tsp ground black pepper
• 1 tbsp sugar
• 1 cup fresh basil leaves (Thai or sweet basil)
• Siling labuyo (optional but highly recommended )
• Oil for cooking
• Fried sunny-side-up eggs, for serving
• Steamed jasmine rice

Instructions:
1. Prepare the aromatics
Heat oil in a pan or wok over medium-high heat.
Add minced garlic and onion. Sauté until fragrant and lightly golden.
2. Cook the beef
Add ground beef and stir-fry until browned and cooked through.
Break apart any large chunks while cooking.
3. Add flavor
Pour in soy sauce, oyster sauce, fish sauce (to taste), black pepper, and sugar.
Mix well and cook for 2–3 minutes until the sauce slightly thickens.
4. Add heat & aroma
Stir in siling labuyo (optional but gives authentic Thai spice).
Then toss in fresh basil leaves.
Stir just until the basil wilts — don’t overcook.
5. Serve
Spoon the basil beef over hot steamed rice and top with a crispy sunny-side-up egg
