CHICKEN MECHADO

Ingredients:

- 1 whole chicken (2-3 lbs), cut into pieces
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 2 medium tomatoes, chopped
- 1 cup tomato sauce
- 1/4 cup vinegar
- 2 tablespoons fish sauce (patis)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil

Instructions:

1. Heat oil in a pan over medium heat.
2. Sauté onions and garlic until softened.
3. Add chicken and cook until browned.
4. Add tomatoes, tomato sauce, vinegar, patis, salt, and pepper. Simmer for 30-40 minutes or until chicken is tender.
5. Taste and adjust seasoning.
6. Serve hot with steamed rice.
