If the topic is cheese, Filipinos don’t even hesitate. Kesong puti agad. And if there’s one place giving it its spotlight, it’s Santa Cruz.
I got to join an overnight trip for the Kesong Puti Festival and it really hits different seeing how locals turn this simple white cheese into so many creative dishes and drinks. From savory plates to sweet surprises, cafés and restaurants showed just how versatile kesong puti can be.
We also caught the Kalabaw Parade which gives so much meaning to every bite, since it honors the hardworking carabao behind the milk.
On top of that, the Slow Food movement in the area makes you appreciate not just the food, but the culture and people behind it.
Kesong puti is not just a cheese, it is a whole experience.
